Fine Dining Server Assistant

Overview
Roka is seeking a motivated and detail-oriented Server Assistant to join our fine-dining team. This role is essential to delivering the seamless, refined service that defines the Roka experience. The Server Assistant supports the Server and Bar teams by maintaining an immaculate dining room, assisting with food delivery, and ensuring guests receive attentive, unobtrusive hospitality inspired by Japanese precision and warmth. This position is ideal for individuals who value excellence, teamwork, and elevated service standards.
Responsibilities
- Clear, bus, and reset tables promptly to maintain a pristine and organized dining environment
- Ensure all tables, chairs, and banquettes are clean, properly set, and free of debris
- Refill water glasses according to Roka service standards
- Assist with food and beverage delivery with accuracy, grace, and attention to presentation
- Participate in marking tables for upcoming courses (appetizers, sushi, entrées, desserts) when required
- Set up and stock floor and side stations with prescribed supplies
- Perform all opening and closing side-work as directed by management
- Maintain cleanliness and organization throughout dining rooms, service stations, and designated back-of-house areas
- Uphold all food safety, sanitation, and hygiene standards during service
- Assist with private dining, special events, and catering functions, including setup and breakdown
- Report all breakage or damage to equipment or furniture immediately to management
- Attend and actively participate in daily pre-service meetings, training sessions, and departmental meetings
- Work collaboratively with servers, chefs, bartenders, and management to ensure smooth service flow
- Demonstrate professionalism, a positive attitude, and a strong commitment to teamwork
- Learn through observation, listening, and hands-on experience while leading by example
Training Requirements
- Completion of company in-venue busser training
- Valid Food Handling Certificate (or ability to obtain)
Qualifications
- Previous experience in fine dining, upscale restaurants, hospitality, or catering preferred but not required
- Strong communication skills and a professional demeanor
- Understanding of bussing, table maintenance, and food handling procedures
- Ability to work efficiently in a fast-paced, high-standard service environment
- Willingness to learn the Roka menu, ingredients, and allergy protocols
- Commitment to exceptional hospitality and guest satisfaction
- Ability to stand for extended periods and lift moderate weights
- Interest in fine-dining service and Japanese hospitality culture is a plus
