About Serpico's Bread Co.
Serpico's Bread Co. is a growing Long Island pizza and catering company. We operate from our regular weekly location in Melville as well as private catered events throughout Long Island.
We're a small, hands-on operation making our dough and food from scratch. We're looking for a dependable kitchen professional who wants to become a consistent part of our team.
This is not just a pizza-making position.
The job includes dough production, food prep, commissary work, stocking our mobile kitchen, pizza service, cleaning and organization.
Typical Schedule
Tuesday–Friday
Approximately 8:00 AM–4:00 PM
Some additional hours may occasionally be available for private events and catering.
Dough Production & Prep
A significant part of this position involves dough production and preparation.
Responsibilities include:
- Mixing pizza and bread dough according to established formulas
- Accurately weighing flour, water, salt, yeast and other ingredients
- Operating commercial dough mixers
- Scaling and portioning dough
- Balling pizza dough
- Using digital kitchen scales accurately
- Working with measurements in grams and kilograms
- Following written dough formulas and production sheets
- Scaling recipes up or down based on production needs
- Labeling and dating dough
- Organizing dough boxes and refrigeration
- Following established fermentation schedules
- Preparing dough for upcoming service days
- Preparing sauces, cheeses, vegetables, meats and other ingredients
- Portioning ingredients according to our specifications
We will teach you our specific dough formulas and procedures, but you must be comfortable working with numbers, following exact measurements and repeating processes consistently.
Commissary & Stocking
Our food is prepared and organized at our commissary and then stocked into our mobile kitchen for service.
Responsibilities include:
- Pulling ingredients and supplies needed for each day's service
- Stocking the truck/trailer before service
- Loading dough, cheese, sauces, toppings and sandwich ingredients
- Stocking pizza boxes, paper goods and service supplies
- Setting up refrigerated ingredients and workstations
- Checking inventory before and after service
- Maintaining simple production and inventory counts
- Rotating, labeling and organizing product
- Returning unused product to the commissary after service
- Restocking the commissary for the following day
- Keeping refrigerators, freezers, shelving and storage areas organized
- Identifying ingredients and supplies that need to be reordered
- Helping make sure the operation is completely stocked and ready for the next service
Pizza & Service
During service, responsibilities include:
- Stretching pizza dough
- Topping pizzas according to our build specifications
- Baking pizzas
- Learning the ingredients and builds for our entire menu
- Preparing sandwiches and other menu items
- Maintaining and restocking stations during service
- Working quickly and efficiently during busy periods
- Communicating with the rest of our small team
- Helping keep service organized and moving
Pizza-making experience is a plus, but we're willing to teach our specific pizza styles and procedures to the right person.
Cleaning & Organization
Cleaning is an important part of this job.
Everyone on our team participates in keeping both the commissary and mobile kitchen clean and organized.
Responsibilities include:
- Washing dishes, utensils and food-preparation equipment
- Cleaning commercial mixers and dough-production equipment
- Cleaning and sanitizing prep tables and work surfaces
- Sweeping and mopping floors
- Cleaning and organizing refrigerators
- Breaking down and cleaning stations after service
- Emptying garbage
- Cleaning and sanitizing the mobile kitchen
- Returning equipment, ingredients and supplies to their proper locations
- Keeping the commissary clean and organized throughout the workday
We're looking for someone who sees something that needs to be cleaned, stocked or organized and takes care of it without having to be asked every time.
Basic Math & Accuracy
You do not need advanced math skills, but you must be comfortable with basic numbers and measurements.
You should be able to:
- Perform basic addition and multiplication
- Accurately use a digital kitchen scale
- Weigh ingredients in grams and kilograms
- Follow written dough formulas
- Scale recipes and production quantities up or down
- Accurately portion dough and ingredients by weight
- Keep simple production and inventory counts
Accuracy matters in this position. Our dough and recipes are produced by weight, so you must be comfortable working with numbers, using a scale and following formulas consistently.
Who We're Looking For
Experience working in a pizzeria, deli, restaurant, bakery or catering kitchen is strongly preferred.

We're not looking for someone who only wants to make pizzas during service.
We're looking for someone who understands that running a good kitchen means dough production, prep, stocking, service, cleaning, organization and getting everything ready to do it again the next day.
Compensation & Hours
$20.00 per hour
Approximately 25–32 hours per week
Typical schedule:
Tuesday–Friday, approximately 8:00 AM–4:00 PM
Some additional catering and private-event hours may occasionally be available.
Pay: $20.00 per hour
