Responsibilities
- Lead and coordinate the preparation and cooking of menu items with precision, efficiency, and consistency.
- Supervise kitchen staff during service, ensuring adherence to recipes, portion sizes, and presentation standards.
- Oversee food safety sanitizing procedures, proper food handling, and sanitation practices to maintain a clean and compliant kitchen environment.
- Assist in menu planning by providing input on ingredient selection, preparation methods, and seasonal specials.
- Manage high-volume food production while maintaining quality control across all dishes.
- Train and mentor team members in culinary techniques such as poaching, braising, grilling, knife skills, and other cooking methods.
- Ensure all food is prepared according to safety standards and industry regulations, including proper food storage and sanitation protocols.
- Support catering events and special functions by preparing large quantities of food efficiently without compromising quality.
- Collaborate with management to streamline kitchen operations and improve overall workflow.
Skills
- Extensive culinary experience with a focus on fine dining or high-volume restaurant environments.
- Strong knowledge of food safety management practices and sanitizing procedures.
- Proficiency in various cooking techniques including grilling, braising, poaching, and food preparation.
- Exceptional knife skills coupled with expertise in food handling and presentation.
- Experience in menu planning, meal preparation, and catering services.
- Background in dietary department or dietary aide roles is a plus for understanding special dietary needs.
- Proven ability to lead a team effectively under pressure while maintaining high standards of food quality.
- Familiarity with the food industry’s best practices for food safety, serving protocols, and high-volume production processes.
