Overview
The Lead Butcher is an experienced, highly skilled meat professional responsible for advanced meat cutting, fabrication, and presentation within the Meat Department at Gala Fresh Farms in Baldwin, NY. This role ensures high-quality product standards, efficient yield management, and strict adherence to food safety regulations in a fast-paced supermarket environment.
In addition to hands-on cutting expertise, the Lead Butcher supports department operations by training junior staff, maintaining production flow, and assisting with inventory and merchandising. This position is key to delivering premium meat quality, minimizing waste, and providing excellent customer service to a diverse, high-volume customer base.
Key Responsibilities
Advanced Butchery & Meat Fabrication
- Perform full breakdown of primal and sub-primal cuts (beef, pork, lamb, poultry)
- Execute advanced knife work, portion control, and specialty cuts
- Prepare custom cuts, value-added products, and customer-requested specifications
- Grind, tie, trim, and prepare meats to exact store standards
- Ensure maximum yield and minimize waste through efficient cutting techniques
Department Leadership & Training
- Support training and development of junior butchers and meat clerks
- Provide guidance on cutting techniques, safety procedures, and quality standards
- Assist Meat Department Manager in maintaining workflow and production efficiency
- Lead by example in cleanliness, productivity, and customer service standards
Customer Service Excellence
- Interact directly with customers for special cuts and product recommendations
- Provide expert guidance on meat selection, preparation, and cooking methods
- Deliver a high level of service aligned with Gala Fresh Farms customer experience standards
- Support bilingual customer needs (English/Spanish preferred)
Merchandising & Inventory Support
- Ensure meat case is fully stocked, properly labeled, and visually appealing
- Assist with inventory control, ordering support, and product rotation (FIFO)
- Help manage seasonal demand (holidays, promotions, weekends)
- Contribute to shrink reduction and cost control efforts
Equipment & Operations
- Operate and maintain meat saws, grinders, slicers, wrapping, and labeling equipment
- Ensure tools are properly sharpened, sanitized, and safely stored
- Maintain a clean and organized work area at all times
- Follow all OSHA and company safety protocols
Pay: $25.00 - $30.00 per hour
