Position Requirements & Qualifications
- Proven Fine Dining Experience: Minimum of 2–4 years of high-volume, upscale, or fine dining experience is strictly required.
- Flawless Culinary Proficiency: Mastery of advanced culinary techniques, precise knife skills, exact protein fabrication, and expert management of cooking temperatures.
- Unyielding Professional Standards: You must possess a meticulous eye for detail, impeccable personal hygiene, and a deep respect for the uniform, the ingredients, and the craft.
- The "Fine Dining Mindset": Absolute accountability, a proactive attitude, and the emotional intelligence to thrive under the intense, high-pressure environment of a premium dinner service.
- Sensory Precision: Exceptional palate for seasoning, sauce reduction, and consistent taste profile replication.
Key Responsibilities
- Precision Execution: Setup, stock, and execute your assigned station (Sauté, Grill, or Entremet) to exact recipe specifications and plating guides. Every plate leaving your station must look and taste like a masterpiece.
- Speed and Focus: Maintain absolute focus and elite speed during peak service hours without ever sacrificing quality, presentation, or consistency.
- Mise en Place Perfection: Own your station’s prep work. Execute complex prep lists with extreme accuracy, minimal waste, and optimal organization.
- Sanitation & Organization: Maintain a spotlessly clean, sanitary, and highly organized workstation in strict compliance with health department codes and internal luxury standards.
- Seamless Teamwork: Communicate clearly, professionally, and respectfully with the Chef team and fellow line cooks to ensure flawless timing and table synchronization.
