About Main Bird
Main Bird is a fast-growing hot chicken restaurant concept with locations across the Houston area (Spring, Katy, Pearland, Westchase, Cypress, Montrose, and Sugar Land), with more on the way. We're building a brand known for bold flavor, consistency, and a great guest experience — and we're looking for an operator who can help us scale without losing what makes us special.
The Role
We're looking for a VP of Operations to own day-to-day performance across all Main Bird locations and build the operational infrastructure to support our next phase of growth. You'll report directly to leadership and be the driving force behind consistency, profitability, and team performance across the concept.
What You'll Do
- Oversee daily operations across all current and future Main Bird locations, ensuring day-to-day execution runs smoothly and consistently
- Monitor and manage food cost and labor cost on a daily basis across all locations, catching and correcting issues in real time
- Own overall P&L performance for the store portfolio, including controllable expenses
- Build and manage relationships with vendors and distributors, including contract negotiation and pricing oversight
- Develop and enforce standard operating procedures across all locations
- Recruit, train, and develop General Managers and store-level leadership
- Lead new store openings, from pre-opening planning through launch
- Use data and reporting tools to identify trends, catch issues early, and drive continuous improvement
- Ensure compliance with food safety, health, and labor regulations across all sites
- Partner with ownership on growth strategy, budgeting, and long-term planning
- Help build out and grow Main Bird's franchise program, including operational standards, training systems, and support structures for franchisees
- Support franchise sales efforts by representing brand standards and operational strength to prospective franchisees
What We're Looking For
- 5+ years in multi-unit restaurant operations, with at least 2+ years in a senior leadership role (Director/VP level or equivalent)
- Experience overseeing 5+ restaurant locations simultaneously required
- Proven track record managing P&L across multiple locations
- Experience opening new restaurant locations from the ground up
- Strong vendor/distributor negotiation experience
- Hands-on leadership style — comfortable in the field, not just behind a desk
- Excellent people leadership and GM development skills
- Familiarity with restaurant tech (POS, inventory/ordering platforms, scheduling tools)
- Proficiency in Excel
- Willingness to travel regularly between Houston-area locations
- Franchise development or franchise sales experience strongly preferred
Compensation & Benefits
- $140,000 – $160,000 base salary, commensurate with experience
- Performance-based bonus eligibility of up to $40,000/year
- Paid time off (PTO)
