The Opportunity
Reporting to the Bakery Department Head, and supervised by the Pastry Chef, the Baker is responsible for supporting the Pastry Chef in providing guidance and supervision and sets as a good example for Bakery Production Associates to follow. He/she is also responsible for drawing up production schedule to determine type and quantity of goods to produce; plans and prepares ingredients and dough for bread, cakes, rolls, mousse, puddings, sweet goods, batters and icings and frostings according to standard operating procedures or special customer orders, etc
You Will:
- Draw up production schedule to determine type and quantity of goods to produce
- Plan and prepare ingredients and dough for bread, cakes, rolls, mousse, puddings, sweet goods, batters and icings and frostings according to standard operating procedures or special customer orders, etc.
- Control product (Bread, Cake and/or other Pastries) quality, inventory level and wastage according to the established standards
- Oversee the mixing of flour, dough, cake mix and other baking ingredients; supervise the baking production processes
- Provide guidance and supervision to the Bakery Production team, ensure fair distribution of work, and ensure proper scheduling is done
- Provide training to Bakery Production Associates and provide feedback on staff performance
- Participate in new product research and development process, encourage innovations
- Order and replenish inventory as and when required
- Responsible for the cleanliness, hygiene, equipment, and tools maintenance follow up and workplace safety of the production area
You Should Have:
- Accountable, pleasant and is able to take initiative
- Possess knowledge and 1-2 years of experience in making bakery products (Bread, Cake &/or other Pastries), including dough mixing, cake cutting and decorating, etc.
- Possess knowledge in workplace health & safety and food safety (FoodSafe Certification requires)
- Have knowledge and experience in supervising bakery production workflow and controlling cost and wastage
- Ability to manage and train employees
- Able to communicate in English, proficiency in Chinese (Cantonese and/or Mandarin) is advantageous
- Flexible to work in various shifts, including weekdays, weekends, holidays, morning, and evening hours
- Have a good understanding of tools & equipment relevant to the job
