We are seeking a skilled, reliable, and passionate PM Grill Cook to join our back-of-house team and help maintain our legacy of culinary excellence.
Position Summary: As the Night Grill Cook, you will be responsible for managing the broiler, grill, and flat-top stations during the Dinner service. You will prepare high-quality meats, seafood, and Mediterranean specialties (such as our signature Shish Kabob, Shish Tawook, Shish Kafta, and Lebanese dinner features) to exact specifications. This role requires excellent time management, precision temperature control, and the ability to seamlessly handle high-volume dinner rushes.
Key Responsibilities:
* Station Setup & Prep: Set up, clean, and sanitize the grill/broiler station for dinner service. Ensure all pars, meats, marinades, and skewered items are fully stocked and prepped.
- Execution & Cooking: Fire, grill, and broil items to precise temperatures and guest preferences, ensuring consistent presentation, flavor profile, and quality.
- Menu Familiarity: Efficiently prepare a variety of proteins (lamb, beef ribeye, chicken, seafood) as well as specialty dinner items, maintaining the flavor integrity of Phoenicia's classic recipes.
- Ticket Timing: Maintain a fast, organized pace to ensure dinner service tickets are executed accurately and delivered to the window efficiently.
- Food Safety & Cleanliness: Adhere strictly to local health department guidelines and safe food handling protocols. Maintain a spotless workstation throughout the shift and execute proper breakdown and cleaning procedures at the end of the dinner shift.
- Team Collaboration: Communicate effectively with prep cooks, line cooks, and front-of-house staff to ensure a smooth, cohesive service environment.
Qualifications & Skills: * Minimum of 1–2 years of experience as a Line Cook, Grill Cook, or Broiler Cook, preferably in a high-volume, fine-dining, or upscale casual environment.
- Strong knowledge of meat temperatures, grilling techniques, and knife skills.
- Familiarity with Middle Eastern/Mediterranean cuisine or cooking with a vertical/horizontal broiler is a major plus, but not required (we will train the right candidate).
- Ability to work in a fast-paced environment while maintaining an organized, clean workspace.
- Excellent reliability and punctuality for dinner shifts.
- ServSafe certification (or willingness to obtain one) is highly preferred.
- Ability to stand for long periods and lift up to 50 lbs.
