Job Overview:
Sushi Line Cooks are responsible for preparing sushi, sashimi, nigiri, sauces, and other menu items in accordance with restaurant standards.
Qualifications:
- High school diploma or GED (exceptions may be made for the right candidate).
- Must be available to work weekends, including Sundays.
- Ability to multitask and work efficiently in a fast-paced environment.
- Must be able to lift 25-50+ lbs and stand for 8-10 hours per shift.
Essential Job Duties:
- Arrive on time, in uniform, and ready to work.
- Maintain a clean uniform and high standards of hygiene.
- Refer to the daily prep list and assist in setting up workstations.
- Prepare food and menu items following RED’s recipes and portion specifications.
- Ensure food quality, consistency, and presentation meet restaurant standards.
- Maintain compliance with food safety, sanitation, and temperature regulations.
- Monitor product freshness, proper rotation, and minimize waste.
- Communicate any product shortages to the Executive Chef or Sous Chef.
- Maintain a clean and organized work environment.
- Complete all opening and closing duties.
Non-Essential Job Duties:
- Attend scheduled team meetings.
- Train or assist as an expeditor when needed.
