Job Title: Expo / Food Expeditor

Compensation: $17–$23/hour, depending on experience
Hyman’s Seafood is a family-owned Charleston landmark known for classic Lowcountry seafood, genuine Southern hospitality, and a fast-paced, high-volume dining environment. We serve a large number of guests each week across multiple dining rooms and pride ourselves on creating an energetic, welcoming experience for both locals and visitors.
We are looking for a strong Expo to help keep service organized, accurate, and moving at the pace our business requires. This role is critical to the flow between the kitchen and front of house and is best suited for someone with prior kitchen experience who understands food execution, timing, and the pace of a busy service.
The Expo is responsible for managing the flow of food from the kitchen to the dining room, ensuring plates are accurate, properly presented, and sent out quickly. This person must be organized, calm under pressure, detail-oriented, and able to communicate effectively with both kitchen and front-of-house teams in a very busy environment. The ideal candidate has a strong back-of-house foundation and understands how a kitchen operates during service.
We’re looking for someone who:
- Has at least 2 years of prior cooking or kitchen line experience
- Understands kitchen flow, ticket pacing, plate presentation, and food accuracy
- Works well in a fast-paced, high-volume restaurant
- Has a strong sense of urgency and can keep service moving
- Communicates clearly and professionally with cooks, runners, servers, and managers
- Is highly organized and detail-oriented
- Can maintain composure during busy shifts and problem-solve in real time
- Takes pride in food quality, execution, and guest experience
- Is dependable, coachable, and team-oriented
- Organize and manage the flow of food from the kitchen to the dining room
- Check all plates for accuracy, quality, completeness, modifications, and presentation before food leaves the kitchen
- Communicate with line cooks, runners, servers, and managers to ensure smooth service
- Call tickets clearly and keep orders moving in the correct sequence
- Catch missing items, allergy issues, special requests, or execution errors before food is delivered
- Help maintain pace and organization during high-volume meal periods
- Support both front and back of house in delivering a strong guest experience
- Keep the expo line clean, stocked, and organized throughout the shift
- Assist with runner coordination and overall service flow as needed
- Follow all food safety, cleanliness, and restaurant standards
- Minimum 2 years of cooking, line cook, or back-of-house kitchen experience required
- Previous expo experience preferred, but strong kitchen experience is required
- High-volume restaurant experience strongly preferred
- Strong communication and multitasking skills
- Ability to stay organized and focused in a loud, busy environment
- Ability to stand for long periods and move quickly throughout the restaurant
- Ability to work nights, weekends, and holidays as needed
