Pearson's is a high-volume cafe in Rochester, NY — part of Swan Family of Restaurants, a multi-concept hospitality group with deep roots in the local food scene. We're looking for an experienced Kitchen Manager to lead our culinary operations at Pearson's, with additional involvement in our catering program.
This is a hands-on leadership role. You'll manage the day-to-day kitchen operation, own the ordering and scheduling for the line, and be part of a culinary team. What You'll Own
Kitchen Operations
- Lead daily kitchen operations at Pearson's — line, prep, and dish
- Maintain food quality, consistency, and kitchen standards across all dayparts
- Ensure a clean, organized, and efficient kitchen at all times
- Partner with bakery, pastry and FOH leadership to ensure smooth service execution
Ordering & Inventory
- Own all ordering for the Pearson's kitchen — proteins, produce, dry goods, bakery and pastry ingredients, and FOH food items
- Maintain par levels, track inventory, and minimize waste
- Build and maintain vendor relationships for the Pearson's kitchen
Scheduling & People
- Write and manage the weekly kitchen schedule for line, prep, and dish staff
- Hire, develop, and hold kitchen staff accountable through coaching and corrective action
- Work in partnership with the bakery and pastry leads — they manage their own teams and set schedules, you maintain oversight of the full kitchen
- Foster a kitchen culture built on consistency, respect, and high standards
Catering Support
- Collaborate with our Catering Chef on the catering program — production support, event prep
- Contribute to menu development and catering production
What We're Looking For
- 3+ years in kitchen leadership — KM, sous chef, or equivalent experience
- Strong organizational skills — ordering, scheduling, and inventory are a big part of this role
- A people leader who can develop staff and hold a standard with consistency and warmth
- Comfortable in a high-volume cafe environment — this is not a fine dining pace, it's a different kind of demanding
- A collaborator — you'll work closely with the Catering Chef, and FOH leadership
- Calm under pressure and solutions-oriented
Pay: $25.00 - $30.00 per hour
