Bottega d'iL Corso is Portland's destination for handcrafted Italian salumi, artisan cheeses, and a thoughtfully curated wine and cocktail program. We're looking for a skilled Cook / Kitchen Lead who takes pride in their craft and wants to grow with us.
The Role
As our Cook / Kitchen Lead, you'll own the lunch kitchen executing a focused, quality-driven menu rooted in French and Italian culinary tradition, with an emphasis on artisan charcuterie and fine cheese. This is a hands-on leadership role with a clear path to a salaried position and benefits for the right person. You'll work closely with ownership to maintain our standards and help shape the direction of the kitchen.
What You'll Do

Execute daily lunch service with efficiency, precision, and attention to quality

Lead and maintain kitchen operations during your shift, Tuesday through Saturday

Prep, cook, and plate dishes consistent with our French and Italian-focused lunch menu

Curate and maintain our cheese and charcuterie program with care and expertise

Maintain food safety, cleanliness, and organization standards

Manage mise en place and assist with ordering and inventory as needed

Collaborate with ownership on menu development and seasonal adjustments
What We're Looking For

3 5 years of kitchen experience, with some leadership or lead cook responsibility

Solid knowledge of French and Italian cuisine technique, ingredients, and tradition

Hands-on experience with cheese and charcuterie selection, handling, plating, and pairing

Comfort in a fast-paced lunch service environment

Reliable, punctual, and team-oriented

A self-starter who takes ownership of their station and their shift

Food Handler's Card required (or ability to obtain promptly)
