Job Purpose Summary
Prepare and keep all food products fresh and at proper temperature, according to Vintage Grocers standards. Maintain cleanliness in support of a productive and profitable store, including product quality and presentation, portion control, speed and efficiency, and cleanliness. The Sushi Prep Chef is supportive of the Management team by example and with integrity.

Essential Job Duties
-
Responsible for product quality and presentation. Properly prepares and holds products. Ensures products are dated, stored and rotated as needed.

Manages portion control. Restocks designated cook area. Counts and/or weighs delivered items. Works within established inventory and cost controls. Follows recipe and product item builds.

Keeps the store clean and maintains sushi facilities as needed and/or directed by Leadership. Maintains personal hygiene as prescribed by law and Vintage Grocers Dress Code standards.

Follows all Company safety and security policies and procedures. Maintains proper temperature of food product. Complies with health code regulations, including but not limited to hairnet and glove usage.

Communicates effectively with the Team to ensure good operations in the deli.

Uses and completes training packets with all new Sushi Team Members. Leads new product roll-out training with all Sushi Team Members.
Non-Essential Job Duties
May perform similar and incidental duties as required by Leadership.
Typical duties for a Sushi position at Vintage Grocers (based on industry standards and the company’s hiring criteria) would include:
Preparing and plating sushi and sashimi such as California rolls, spicy tuna avocado, tuna, salmon, yellowtail, shrimp nigiri, and poke platters
Following food safety and hygiene standards to ensure all sushi is fresh, properly handled, and presented attractively
Assisting in menu development for sushi offerings
Maintaining inventory of fresh fish, rice, vegetables, and condiments, and ordering as needed
Working efficiently in a team environment to meet customer demand, whether in‑store or for catering events
Providing excellent customer service by ensuring sushi is served promptly and to high-quality standards.
Job Qualifications
Education: High school degree or equivalent combination of education and experience preferred.
Experience: Sushi experience preferred.
Knowledge: Knowledge of all aspects in the restaurant industry. Ability to quickly make and execute decisions regarding food quality, quantity needed, and when to clean.
Math Skills: Ability to perform money-related mathematical calculations.
Other: Individual must have reliable transportation to arrive at work on time.
