PRODUCTION BAKER / DOUGH SOUS CHEF – FULL-TIME
Passione Brands and Hot Italian are seeking an experienced, hands-on baker or sous chef with strong professional baking and dough-production experience for our Berkeley production facility.
This is not primarily a pastry position. The role focuses on artisan pizza and pinsa dough, sourdough and pre-fermented dough, par-baked products, production consistency, quality control, food safety, and new-product development.
Responsibilities:
- Mix and manage large batches of dough using baker’s percentages
- Monitor fermentation, hydration, temperature and proofing
- Troubleshoot dough-quality and production problems
- Produce sourdough, pre-fermented dough, pizza crusts and baked products
- Maintain accurate recipes, production records and quality standards
- Train and supervise production employees
- Follow GMP, sanitation and food-safety procedures
- Assist with R&D and product improvement
- Coordinate production schedules, inventory and distributor pickups
Qualifications:
- At least 3–5 years of professional bread, pizza-dough or commercial baking experience
- Strong understanding of fermentation and dough science
- Experience with commercial mixers, ovens and high-volume production
- Ability to lead employees while remaining hands-on
- Reliable, organized and able to work a consistent weekday schedule
- Food-manufacturing, HACCP, SQF, USDA or organic-certification experience is preferred
- English or Spanish communication skills; bilingual is a plus
Compensation: $22–$30 per hour, depending on experience
Schedule: Monday–Friday, 8:30 a.m.–4:30 p.m.
