The Garde Manger Chef is responsible for preparing cold dishes, appetizers, salads, and plated starters while maintaining a clean, organized station in a fast-paced fine dining kitchen. This position works closely with the kitchen team to ensure that all cold preparations are executed accurately, consistently, and in a timely manner while maintaining the highest standards of quality, presentation, and sanitation.

Set up and stock the garde manger station with all necessary ingredients and supplies

Prepare cold menu items including salads, appetizers, charcuterie, and composed plates

Portion and prepare ingredients such as vegetables, seafood, and cured or readytoserve items

Plate dishes with a high level of precision and attention to presentation

Work in coordination with the kitchen team to ensure timely service and proper course pacing

Follow the Executive Chef’s instructions and kitchen procedures

Break down and clean the station after service and properly store remaining food

Maintain appropriate inventory levels and communicate prep and ordering needs

Ensure all dishes meet quality and presentation standards before leaving the kitchen

Follow all food safety, sanitation, and safety regulations

Maintain a professional and positive attitude with coworkers and guests

Two years of experience in a fine dining restaurant as a garde manger cook, line cook, or similar role

Strong understanding of cold food preparation, knife skills, and plating techniques

Attention to detail and ability to maintain consistency in presentation

Ability to execute tasks with accuracy and speed in a fastpaced environment

Familiarity with industry best practices

Must have or be able to obtain ServSafe® Florida Food Protection Manager Certification

Must be authorized to work in the United States
Typical shift begins at 12:30 PM and continues through close.
Shifts available seven days per week.
