Director of Food & Beverage Programs & Operations

Position Summary
The Director of Food & Beverage Programs & Operations is responsible for shaping and scaling the culinary and beverage experience across all national venues, including bars, lounges, and restaurants. Reporting directly to the VP of Hospitality, this strategic and operational leader will drive national policy creation, spearhead cross-functional project management, and design innovative revenue-generating ancillary programs (serving theatrical, live entertainment, music and comedy programming) across multiple venues in various locations with key drivers being menu development, margin growth, cocktail innovation, pricing strategies, accelerated queue/in-line pace and superior overall guest experience.
This role ensures operational excellence, brand consistency, and maximized profitability by conducting rigorous audits and leading a remote team of field-based direct reports.
Key Responsibilities
- Project Management: Lead complex, multi-venue rollouts of new F&B concepts, technological implementations, and brand initiatives from conception through to execution.
- Policy & Standardization: Develop, implement, and maintain comprehensive operational policies, SOPs, and service standards for all bars, lounges, and restaurants nationwide.
- Technology: Own the development of a creative Point of Sale system the drives nimble reporting and data that drives key decision making and results, while aligning with Global data teams.
- Revenue Innovation: Partner with programming and ticketing teams to design, price, and launch high-margin F&B add-on packages tailored to theatrical, live music, and comedy event attendees and venues.
- Operational Auditing: Establish and execute a robust operational audit framework to measure compliance with brand standards, safety regulations, guest satisfaction metrics, and cost controls.
- Training & Development: Maintains working training programs, monitors compliance to standards and assist properties in ensuring team members deliver superior guest service experience.
- Team Leadership: Directly manage, mentor, and evaluate a field-based team responsible for local program execution. Ensure clear communication of corporate initiatives and KPIs. Maintains speed and efficiency in delivering new initiatives and program.
- Performance Tracking: Analyze field reports to monitor program progress, labor efficiency, waste management, and overall margins/profitability. Deliver actionable insights and course-corrections to the VP of Hospitality.
Qualifications
- Experience: 5-7 years of progressive management experience in multi-unit Food & Beverage operations, hospitality corporate management, or entertainment venues. Corporate level experience a plus.
- Education: Bachelor's degree in Hospitality Management, Business Administration, or a related field (or equivalent practical experience).
- Project Management: Proven track record of managing nationwide or regional projects, rollouts, menu engineering initiatives, and delivering on time and in budget.
- Analytical Skills: Strong financial acumen with the ability to dissect P&L statements, analyze field data, and optimize labor and product costs.
- Leadership: Demonstrated experience managing remote or field-based direct reports effectively.
- Travel: This is a remote position with ability to travel up to 30-40% to conduct venue audits and provide hands-on field support.
