Kitchen Manager – Modena Ristorante Vinoteca (Marietta, GA)
Modena Ristorante Vinoteca is looking for a strong, hands-on Kitchen Manager with a real cooking background—not someone who just manages schedules and paperwork.
This is a working chef role. You must be comfortable on the line, leading a team during service, and holding high standards every single shift. If you can’t jump in and cook at a high level when needed, this is not the position for you.
We need a leader who takes full ownership of the kitchen, drives performance, controls costs, and delivers consistent, high-quality food—no excuses.
What You’ll Be Responsible For
- Running a clean, organized, high-performing kitchen every day
- Working the line and expediting during service when needed
- Training, managing, and holding BOH staff accountable
- Enforcing consistency in recipes, plating, and execution
- Maintaining strict sanitation and health department standards
- Managing inventory, ordering, and vendor relationships
- Controlling food cost, tracking waste, and hitting labor targets
- Executing BOH systems: line checks, temp logs, walkthroughs, etc.
- Conducting Taste & Temp checks to ensure quality and safety
- Managing performance, coaching, and disciplining staff when necessary
What We Expect
- Minimum 3 years of kitchen management experience in a high-volume restaurant
- Strong, proven cooking background — you can run a station or the line under pressure
- Ability to lead from the front — not manage from the office
- High standards, attention to detail, and zero tolerance for sloppy execution
- Strong understanding of food cost, labor, and kitchen efficiency
- Reliability and accountability — your kitchen reflects you
- Availability to work nights, weekends, and holidays
