Job Description
Prepare and present high-quality sushi and Japanese dishes, manage sushi station operations, ensure food safety and consistency, and provide excellent guest service in a fast-paced restaurant environment.
Key Responsibilities:
- Prepare and plate sushi, sashimi, nigiri, maki, and specialty rolls to restaurant standards.
- Select, assess, trim, and portion fish and seafood; maintain proper storage and rotation (FIFO).
- Prepare sushi rice to correct texture, seasoning, and temperature; handle vinegars and dressings accurately.
- Maintain knife skills and care for sushi knives (sharpening, cleaning, safe storage).
- Create and update menu items, daily specials, and tasting omakase courses as directed.
- Ensure meticulous presentation and portion control for consistency and cost management.
- Monitor and maintain sanitation and food safety standards (proper temperatures, cross-contamination prevention).
- Manage inventory for sushi station: order ingredients, receive deliveries, and track usage.

Qualifications
Minimum 2 yr experience required
2+ years experience, wage of $20-$30 per hour or more
