Position Summary
The Pasta Prep Cook is responsible for preparing, producing, and maintaining all fresh pasta and related mise-en-place according to the restaurant’s standards of quality, consistency, and presentation. This role supports the culinary team through precise preparation, organization, and execution while maintaining cleanliness, efficiency, and food safety standards in a fast-paced kitchen environment.
Reports To: Chef de Cuisine
Core Responsibilities
- Prepare fresh pasta doughs, rolled and extruded pastas, and related mise-en-place according to recipes and kitchen standards.
- Maintain consistent quality, portioning, texture, and presentation of all pasta preparations.
- Set up and organize prep stations in a timely and efficient manner before service.
- Label, store, rotate, and organize all products following FIFO and food safety procedures.
- Maintain cleanliness and organization of workstations, kitchen equipment, prep areas, and storage spaces throughout shifts.
- Assist with production schedules and support station preparation for service needs.
- Uphold all Department of Health, sanitation, and food safety standards at all times.
- Adapt to additional prep and kitchen responsibilities as assigned by the Chef team.
Service & Guest Experience
- Support the culinary team in delivering high-quality dishes through consistent and precise pasta preparation.
- Demonstrate attention to detail, urgency, professionalism, and teamwork in a fast-paced kitchen environment.
- Work collaboratively with chefs and kitchen staff to maintain efficient service flow and kitchen organization.
- Contribute to a clean, organized, and excellence-driven kitchen culture focused on hospitality and quality.
Qualifications:
- Minimum of 1 year of pasta production
- Strong organizational skills and self-motivation.
- Excellent attention to detail and ability to work cleanly and efficiently.
- Ability to work successfully within a team-oriented environment.
- Understanding of cooking techniques, dough handling, and food safety practices.
Ability to stand and walk for extended periods (8+ hours), and to crouch, bend, and lift or move 25+ lbs, with or without reasonable accommodation
