The Role
The Head Baker is accountable for bakery output — hitting daily production targets, planning capacity for large and custom orders, and holding quality consistent batch after batch. The position owns cost control for the department, from ingredient ordering and stock coordination through to waste, and builds the team that delivers it through hands-on training and sign-off. This is high-volume production work with an early start: the role is about consistency and output.
Essential Duties and Responsibilities
- Own daily production targets and plan capacity for large and custom orders
- Mix, bake, and finish cakes to recipe and portioning standards — consistency batch after batch
- Scale ingredients accurately and hold quality to standard across every batch
- Own department cost control — track yield and waste, and report daily usage to the Store Manager
- Own bakery stock and supplies — monitor inventory, rotate stock (FIFO), manage shelf life, place daily orders, and receive deliveries
- Coordinate ingredient and packaging needs with the Store Manager ahead of peak periods
- Train and develop the bakery team hands-on, and sign off when new hires are ready
- Lead new-product development — recipe testing and launch into production
- Maintain a clean and organized assigned station and follow all food safety guidelines
- Complete opening setup and end-of-production duties for your assigned area
Requirements
- MUST BE AT LEAST 18 YEARS OF AGE TO APPLY
- 2-3 years of bakery or high-volume production baking experience
- Able to develop and scale a recipe
- Confident training others on recipes, equipment, and standards
- Comfortable with numbers — scaling recipes, tracking yield and waste, and working to daily production targets
- Comfortable with early morning starts
- Comfortable standing for long periods and lifting up to 50 lbs
- Decorating skills a plus, but not required
