ABOUT THE CONCEPT
We're opening a new food destination in Beacon, NY: A neighborhood market centered on high-quality prepared foods, a full-service seafood bar and retail counter, and a professional catering kitchen that anchors our expanding group of businesses. This is a first-of-its-kind concept for us, and we're looking for the right chef to help bring it to life from the ground up.
The ideal candidate leads with flavor and logistics in equal measure. Equally comfortable breaking down whole fish, leading a prep team, and managing food logistics for an offsite dinner of 100 people or more in the evening.

WHAT YOU'LL OWN
- Lead all aspects of pre-opening: kitchen design input, equipment setup, vendor sourcing, and menu development for the market, seafood counter, and catering program
- Build the culinary team from scratch: recruit, hire, and train cooks, prep staff, and counter staff across all three formats
- Develop and maintain a rotating selection of prepared foods, daily market offerings, and a seafood program that reflects seasonality and provenance
- Manage the catering operation end-to-end: client menus, production timelines, logistics, and on-site execution
- Establish operational structure: scheduling, ordering, inventory, and cost controls that integrates smoothly with our existing businesses
- Collaborate with ownership on pricing strategy, brand positioning, and how this concept fits within the larger group
- Uphold the highest standards of food safety, quality, and consistency across all touchpoints
WHO WE'RE LOOKING FOR
- 5+ years of culinary leadership experience with a strong background in catering operations at scale
- A genuine passion for seafood — sourcing, butchery, raw bar, and cooked preparations
- Proven ability to hire, develop, and retain kitchen talent in a fast-moving environment
- Experience opening a new concept or department — you know how to build systems before the doors open
- Strong business acumen: food cost management, scheduling, vendor relationships, and P&L awareness
- Collaborative spirit with an ownership mentality — you treat this like your own kitchen
- Hudson Valley connections or a desire to build them are a plus
