Job Overview:
Sushi Cook I
- Experience with Maki, Temaki, Sashimi and Nigiri
- Expert Knife skills
- Slice, cut, and fillet seafood
- Executes recipes from preparation to presentation.
- Monitor the quality and freshness of seafood and other ingredients,
- Maintain cleanliness and organization of the sushi station, mis-en place
- Executes proper food safety and hygiene procedures, including storage, temperature control, and sanitation.
- Provides congenial and expert service while scheduled open kitchen shifts
- Assist in menu development, including new roll concepts and seasonal specials.
- Manage inventory and assist with ordering supplies as needed.
- Assists with duties and projects as assigned
- Reports to Lead Chef
Sushi Cook II
- Proficient with Maki, Temaki and kitchen operations
- Knife Skills
- Executes recipes from preparation to presentation.
- Efficient with opening, closing and cleaning assignment
- Monitor the quality and freshness of seafood and other ingredients,
- Maintain cleanliness and organization of the sushi station, mis en-place
- Executes proper food safety and hygiene procedures, including storage, temperature control, and sanitation.
- Provides congenial and expert service while scheduled open kitchen shifts
- Supports Sushi Chef, Lead Cook / Cook I with operational responsibilities
- Assists with duties and projects as assigned
- Reports to Lead Chef
Responsibilities:
- Butcher and portion a variety of fish and seafood with precision - preferred
- Prepare and assemble maki rolls and temaki (hand rolls)
- Maintain high standards of cleanliness and food safety
- Uphold quality and consistency in every dish served
- Interact professionally with guests at the sushi bar
- Work collaboratively with fellow chefs and FOH team
- Ensure prep and station setup are ready for service
Requirements:
- Minimum 2 years of experience in sushi preparation
- Proficiency in rolling maki and crafting temaki
- Experience with prepping sauces and composed dishes
- Ability to work in a fast-paced, high-volume environment
- Strong communication and teamwork skills
Flexible schedule, including nights and weekends
Pay: $16.00 - $25.00 per hour
