Job Summary
We are seeking a mechanically-skilled Machine Operator / Technician to join our dumpling factory team! In this dual role, you will be the technical lead on our production lines, responsible for the advanced setup, precision operation, and mechanical maintenance of our specialized dumpling-making equipment (including dough mixers, rollers, wrapper cutters, and automated forming machines).

Primary Responsibilities
- Technical Setup & Precision Calibration: Perform advanced calibration and setup of automated dumpling machinery and commercial mixers to ensure exact recipe specifications and high-tolerance production standards.
- Mechanical Troubleshooting: Act as the first line of defense for equipment failures. Diagnose and repair mechanical issues, dough jams, or filling blockages in real-time to maximize line efficiency and minimize downtime.
- Troubleshooting: Quickly identify and resolve minor mechanical issues, dough jams, or filling blockages to minimize downtime.
- Preventative & Corrective Maintenance: Execute comprehensive maintenance schedules, including the disassembly of complex machine components for deep cleaning, lubrication of mechanical drive systems, and technical reassembly.
- Quality Assurance: Perform regular quality checks on finished dumplings (checking for proper weight, shape, and tight seals) before they head to the packaging line.
- Safety & Compliance: Strictly follow Lockout/Tagout (LOTO) safety procedures, OSHA guidelines, and Good Manufacturing Practices (GMP) for food hygiene.
Requirements & Qualifications
- Proven experience as a machine operator, technician, or similar role in food manufacturing.
- Strong mechanical aptitude with the ability to troubleshoot, calibrate, and perform preventative maintenance on complex production machinery.
- Ability to lift up to 50 lbs and stand for extended periods during shift.
- Comfortable working in a fast-paced environment with repetitive motions and varying temperatures.
- Proficiency in following detailed technical manuals, safety protocols (LOTO), and GMP standards.
- Strong attention to detail and ability to maintain consistent production quality.
