Summary of Position:
Under the direction of the Head Coach/General Manager and Assistant Coach/Assistant General Manager the Kitchen Coach/Manager will oversee all kitchen operations; ensuring that the restaurant and company standards of food quality and service are met. The Kitchen Coach/Manager will develop quality products through consistent execution of product procedures and standards. Optimizing profits and increasing sales by controlling food cost, labor cost, and outstanding food quality that exceeds guest expectations
Duties & Responsibilities:
· Manage BOH (Back of House) staff.
· Assist the Head Coach/General Manager in insuring proper staffing levels for the kitchen and implementing staffing plans for the BOH staff. Schedules for proper staff levels per day with a weekly schedule to be posted by Thursday for the following week.
· Provide direction and training to team members regarding operational and procedural issues. Certified Pizza Artist program in place.
· Develop BOH team members through training, shift meetings, and monthly staff meetings. Conduct regular production and recipe demonstrations. Enforce company policies. Provide feedback and follow-up
· Keep Head Coach or General Manager, Assistant Coach or Assistant General Manager, Shift Coach/Manager fully informed of all matters of significance and take prompt corrective action where necessary or suggest alternative courses of action.
· Maintain high level of cleanliness, organization, storage and sanitation of food products using the ServSafe Sanitation policies.
· Assure excellent food quality by working at the expediter station and performing line checks.
· Oversee production of all prep items, prepare daily food production and adjust par levels as necessary
· Food orders are completed weekly and inventories monthly or as often as deemed necessary by the Head Coach using order-inventory system.
· Maintain uniform standards for all BOH team members and him/herself.
· Create a fun and positive working environment.
· Be willing and able to help where needed in all areas of the restaurant as directed by the Head Coach or General Manager and Assistant Coach or Assistant General Manager
· Stay informed and current on all areas of Safety Management
· Complete accident reports promptly in the event of a guest or team member injury.
· Provide a high quality image of Happy Joe's Pizza & Ice Cream at all times to promote its objectives and enhance public recognition of all its areas of endeavor.
· Maintain a favorable working relationship with all other Happy Joe’s team members, Guests and Franchises to foster and promote a harmonious working climate that maximizes morale, productivity, and efficiency.
· Report all injuries to Head Coach/General Manager and Assistant Coach/Assistant General Manager.
Qualifications:
· Valid on all BOH positions and possess completed training materials.
· Maintain and operate the TOAST POS system
· Manage cash appropriately and accurately
· Communicate effectively verbally and in writing with guests, fellow employees, and management
· Respond promptly to needs of guests, FOH and BOH team members and consistently handle disciplinary actions.
· Clearly communicate with the entire management team to effectively achieve goals and responsibilities.
· Handle multiple priorities, work under stress and exercise good judgment when dealing with guest and team members’ situations and complaints.
· Hear well in moderate-loud environment in order to respond to guests’ requests.
· Handle cleaning compounds and chemicals, safely.
· Must be able to perform under pressure in a high-volume restaurant including moving and responding quickly for long periods of time.
· Be able to work in a standing position for long periods of time (up to 10 hours).
· Be able to reach, bend, stoop and frequently lift up to 50 pounds.
· Must be able to work day, nights and weekends.
· Must have the stamina to work extended hours per week and work during peak work hours Thursday – Sunday.
