POSITION SUMMARY
The FOH Specialist is a guest educator, not a traditional server. Working the Charcuterie Counter, Retail Floor, and supporting Evening Service, this role builds boards to spec, guides guests through our market products, and ensures every guest interaction reflects Charcuteria's hospitality standards.
KEY RESPONSIBILITIES
- Build charcuterie boards to spec using the 3-3-3-3 Rule (3 meats, 3 cheeses, 3 carbs, 3 accompaniments) and Craft Reference Guide technique standards (slicing, cheese cutting, salami folding including the signature rose)
- Prepare and assemble sandwiches and Build-Your-Own (BYO) orders during the 10 AM–3 PM sandwich window
- Guide guests through the guest-directed, QR-based ordering model, menu, and pairing suggestions
- Staff the Retail Floor/Market, assisting guests with in-house sauces, marinated items, and specialty retail products, and maintaining stock and FIFO rotation
- Operate Toast POS for orders, tabs, and retail transactions
- Support Evening Service alongside the Wine & Bar Station
- Participate in receiving as an all-hands effort, ensuring one FOH Specialist always holds the floor during deliveries
- Follow allergen quick-reference protocols and communicate allergen information accurately to guests
- Support opening and closing checklists for the Charcuterie Counter and Retail Floor stations
QUALIFICATIONS & CERTIFICATIONS
- DC Food Handler Certification preferred (or ability to obtain within first 30 days)
- We are specifically looking for candidates with hands-on charcuterie experience — comfort with salami folding techniques (including rosette/rose folds), proper cheese cutting technique, and thoughtful board arrangement is a strong differentiator
- Prior counter service, retail, or hospitality experience preferred
- Comfortable with POS systems (Toast experience a plus)
- Strong product knowledge aptitude — willingness to learn salumi, cheese, and wine pairing basics if not already established
CROSS-TRAINING & FLEXIBILITY
- Comfortable rotating onto the Wine & Bar or Coffee Bar stations during slower periods or when needed for coverage
- All positions at Charcuteria are cross-trained across departments (Charcuterie Counter, Wine & Bar, Coffee Bar, Retail Floor/Market, and BOH) — team members should expect to rotate and support other stations as business needs require
- Flexibility to support catering and events work streams (prep, packing, delivery, or on-site service) as scheduling requires
- We're glad to train the specifics of our program, but we're especially looking for people who already have a genuine interest in food, wine, coffee, and hospitality
- Willingness to grow into and contribute other skills beyond the core role (e.g. digital marketing/social content, light handy work/facilities support, events help) as opportunities arise
PHYSICAL REQUIREMENTS
- Ability to stand for extended periods, use a deli slicer safely, and lift up to 30 lbs
- Comfortable working in a fast-paced, guest-facing environment
- Evening, weekend, and holiday availability required
GROWTH PATH
FOH Specialists who demonstrate strong product knowledge and guest education skills may progress toward Mixologist, Coffee Bar Lead, or shift lead roles.
