THE ATMOSPHERE
The Longboard St. Thomas is the third iteration of the concept originally opened on St. John in the US Virgin Islands in 2015. Like its flagship, the STT location offers innovative and refined seafood-forward island fare, and a lively bar program featuring Caribbean-inspired craft cocktails. The laid-back lifestyles of St. Thomas and St. John mesh perfectly to create a relaxed, coastal vibe in a vibrant setting.
THE IDEAL MATCH
The Chef de Cuisine is responsible for establishing and executing superior guest experience through excellent food and hospitality. We’re looking for someone passionate about crafting delicious food, building high-performing teams, championing our brand's vibe and values, and delivering top-tier hospitality. The ideal candidate is a practiced problem solver, maintains a calm demeanor under pressure, persists in getting the job done, and enjoys coaching and working alongside a large team to improve performance and increase retention. This position oversees the hiring and development of restaurant team members, holding the standard for operational excellence. Working alongside the team, you’ll set and achieve new milestones across our culinary program, team culture, and overall guest experience.

KEY ACCOUNTABILITIES
- Craft stunning, flavor-forward dishes that hit the Chef’s exact standards every single time.
- Move with speed and precision without ever compromising on quality, portioning, or plate appeal.
- Own your station prep—from prep work and chopping to keeping your line stocked and service-ready.
- Maintain high food safety and cleanliness standards to ensure a safe, compliant kitchen.
- Bring a high-energy work ethic, sharp eye for detail, and a commitment to keeping a spotless workspace.
- Assist with cleaning and stocking. Open and close the restaurant and perform related work as requested.
- Work efficiently, stay focused on quality, and uplift the team with a constructive, team-first attitude.
- Be a culture builder—bring positive energy, authenticity, reliability, and pride in how you show up every day.
- Consistently deliver a culture of Enlightened Hospitality to guests and team members.
- Drive accountability: Mentor and align the Sous Chef team to keep daily kitchen operations running seamlessly.
- Inspire a high-performing kitchen team ensuring seamless timing, incredible food execution, and high standards during every rush.
- Stay ahead of seasonal product trends and collaborate with the Executive Chef on timely menu updates to keep our offerings innovative and fresh.
- Set the tone for a collaborative environment with clear, open communication between the kitchen and floor teams.
- Run airtight operational systems to guarantee an immaculate, "A-Grade" health inspection environment.
- Execute admin duties, inventory, and paperwork with complete accuracy and timely turnarounds.
- Mentor with empathy and hospitality, building clear pathways for staff growth and promotion.

ROLE REQUIREMENTS
- 4+ years of Sous Chef experience in a similar environment.
- Passion for training and the development of others.
- Strong work ethics and even temperament.
- Attention to details of food quality, preparation, and presentation.
- Flexible and adaptive to rapidly changing priorities and work demands.
- Promote, work, and act in a manner consistent with the mission of Ballast Hospitality, always setting a professional example.
- Knowledge of Microsoft Office applications, restaurant scheduling, inventory, and purchasing experience necessary.
- Strong computer skills.
- Culinary degree or equivalent experience.
- English fluency and Spanish preferred but not required.
- Ability to stand/walk for extended periods of time.
- Available to work on weekends, holidays and nights as required.
