Position Summary
The Sous Chef is responsible for delivering exceptional service while embodying the Core Values of Paws Up Montana and upholding Forbes Travel Guide Five-Star standards. This role is instrumental in creating authentic, personalized experiences for guests and ensuring seamless daily operations across our unique, open-air, rustic, and non-traditional kitchen settings. Through professionalism, attention to detail, and a commitment to excellence, the Sous Chef helps create unforgettable, wilderness-inspired Montana experiences that define the Paws Up brand.
Key Responsibilities

Daily Culinary Leadership: Assist the Executive Chef in overseeing all aspects of kitchen operations, from prep to service, while personally performing tasks, directing line cooks, and ensuring absolute consistency, quality, and timeliness of all dishes.

Outdoor Operations & Event Execution: Actively engage in and lead outdoor cooking operations (grilling, smoking, open-flame, and campfire cooking) across various resort settings, including mobile kitchens, remote-site catering, and special events.

Cross-Departmental Synergy: Meet daily with culinary leadership to coordinate production standards, conduct shift meetings with the wider Food & Beverage team, and collaborate on special guest requests, food allergy procedures, and dietary restrictions.

Sanitation & Safety Compliance: Ensure strict adherence to all food safety, sanitation, and resort health policies, maintaining rigorous standards even in variable weather conditions and remote environments.

Guest-Centric Brand Standards: Maintain high visibility and a personable demeanor, interacting directly with guests to enhance their dining experience and represent the resort in a legal, ethical, and professional manner.

Logistics, Inventory & Ordering: Perform daily inventory walk-throughs to prioritize product utilization, estimate production needs, purchase and order all food products/supplies, and oversee equipment upkeep.

Team Development & Performance Management: Interview, hire, train, coach, and develop culinary team members; identify and document individual performance according to standard operating procedures to foster a positive, adaptable working culture.

Perform additional duties as assigned by the Executive Chef.
Qualifications

High school diploma, GED, vocational training, or a certificate in culinary arts or a relevant field.

Experience as a Lead Line Cook, Kitchen Supervisor, or Sous Chef is preferred, with a proven ability to plan menus and control inventory (willing to train the right dedicated individual).

Direct familiarity or hands-on experience with grilling, smoking, open-flame, campfire cooking, or remote-site catering is highly desirable.

Calm under pressure with a professional, hospitable demeanor and a passion for non-traditional, outdoor kitchen setups.

Ability to work independently and collaboratively in a fast-paced, high-expectation environment while maintaining a neat, clean appearance.

Valid Food Handler’s License and a valid State Driver’s License.
Physical Requirements

Ability to stand, walk, bend, and perform physical work outdoors in variable weather conditions and across diverse ranch terrain for extended periods.

Ability to work flexible hours, including weekends and holidays, as required by business needs.

Ability to lift, carry, and maneuver heavy outdoor cooking equipment, mobile kitchen assets, and bulk inventory up to 50 lbs.
