Salary: $90,000–$100,000 (commensurate with experience)
Ruby’s Café brings the energy and spirit of Australian café culture to New York City, featuring thoughtfully sourced ingredients, vibrant seasonal dishes, and warm, genuine hospitality. Our Williamsburg location is one of the newest additions to the Ruby’s family, and we’re seeking a Chef de Cuisine to lead our Back-of-House operations with consistency, passion, and strong leadership.
About the Role
The Chef de Cuisine is responsible for overseeing all kitchen operations at our Williamsburg location, ensuring culinary excellence, operational efficiency, and a positive, professional kitchen culture. This is a hands-on leadership role that works closely with and reports directly to the Corporate Chef, helping maintain brand standards while driving execution, accountability, and team development.

Key ResponsibilitiesBOH Leadership & Team Management
- Oversee all kitchen operations including prep, line execution, sanitation, and service flow
- Recruit, train, schedule, and mentor BOH team members
- Foster a collaborative, respectful, and performance-driven kitchen culture
- Conduct line checks, quality control, and ongoing staff development
Culinary Execution & Consistency
- Ensure all dishes meet Ruby’s standards for quality, presentation, and flavor
- Partner with the Corporate Chef on recipe adherence, menu updates, and seasonal rollouts
- Monitor food quality and execution across all service periods
Financial & Operational Management
- Manage food cost, labor cost, ordering, and inventory controls
- Ensure compliance with NYC Department of Health standards and food safety regulations
- Maintain equipment functionality, cleanliness, and safe working conditions
Collaboration & Communication
- Work closely with FOH leadership to ensure seamless service and guest satisfaction
- Provide regular operational and performance updates to the Corporate Chef
- Assist with company-wide culinary initiatives, systems, and training programs
Qualifications
- 3+ years experience as a Sous Chef or Chef de Cuisine in a high-volume, chef-driven kitchen
- Strong leadership, communication, and organizational skills
- Proven success in BOH management, cost control, and team development
- Ability to thrive under pressure while maintaining high culinary standards
- NYC DOH Food Protection Certificate required
Compensation & Benefits
- Salary: $80,000–$90,000, based on experience
