We are seeking versatile, high-energy Prep / Line Cooks to join our culinary team. In this dual role, you will be the backbone of our kitchen—responsible for laying the foundation of our menu through precise daytime prep, and executing high-quality dishes on the line during high-volume service. The ideal candidate transitions seamlessly between independent prep lists and fast-paced line execution, taking immense pride in consistency, speed, and food safety.
Key Responsibilities
- Line Execution: Prepare, season, and cook menu items to exact specifications and presentation standards under tight service windows.
- Recipe & Ingredient Prep: Complete daily prep lists efficiently—including executing batch recipes/sauces, butchering/portioning proteins, and washing, chopping, and slicing produce.
- Food Safety & Rotation: Maintain strict adherence to local health department codes. Label, date, and organize all items using FIFO (First In, First Out) standards to ensure freshness and minimize waste.
- Station Management: Set up, stock, and maintain an immaculate station throughout service; safely operate and clean commercial kitchen equipment.
- Kitchen Communication: Collaborate closely with the expeditor and fellow kitchen staff to ensure smooth ticket times, proper food quality, and a cohesive team environment.
- Breakdown & Sanitation: Participate in daily kitchen breakdown, station shift-changes, and deep-cleaning protocols.
Skills & Qualifications
- Experience: Previous experience as a Line Cook, Prep Cook, or similar culinary role in a fast-paced, high-volume restaurant.
- Technical Skills: Strong foundational knife skills, proficiency in various cooking techniques (grill, saute, fry, etc.), and the ability to multitask.
- Food Safety: Solid understanding of food safety regulations, proper holding temperatures, and sanitation procedures.
- Attributes: Exceptional attention to detail, strong organizational skills, and a positive, hustle-first attitude.
- Physical Requirements: Ability to stand for extended periods, work comfortably in a high-temperature kitchen environment, and lift up to 50 lbs.
