The Head Sushi Chef the leader who manages all aspects of Shin Shin restaurant. The responsibilities of this position include, but are not limited to; preparing all necessary food prep for the kitchen and sushi line, operating the hot line, executing service, placing orders for supplies as needed, the oversight of staff training, and discipline of culinary staff according to Caldera House policies and procedures
Essential Job Functions
- Lead and oversee all sushi kitchen operations, ensuring the highest standards of quality, consistency, and presentation.
- Prepare and present sushi, sashimi, nigiri, rolls, and other Japanese cuisine according to established recipes and standards. Manage food prep activities.
- Develop seasonal menus and create new sushi offerings in collaboration with the Executive Chef or culinary leadership.
- Source, inspect, and maintain the quality and freshness of seafood and other ingredients.
- Ensure strict compliance with food safety, sanitation, and health regulations.
- Direct, train, mentor and supervise performance of all cooks at Shin Shin restaurant.
- Monitor food costs, labor costs, and inventory levels to meet budget goals.
- Maintain complete knowledge of correct maintenance and use of equipment; use of equipment and tools, only as intended, safely and properly.
- Maintain organization, cleanliness and sanitation of all food related work areas and equipment
- Regularly taking inventory of food supplies and other products.
- Reporting any problems with kitchen equipment to the manager on duty.
- Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use.
- Communicating with wait staff to ensure that special requests and food allergy considerations are met.
- Attend and contribute to weekly culinary meetings
- Minimize waste and maintain controls in product utilization to attain forecasted food cost.
- Perform other duties as directed, developed, or assigned
Qualifications:
- Minimum of 5 years of progressive experience in sushi preparation and Japanese cuisine, with at least 2 years in a supervisory or leadership role.
- Advanced knife skills and extensive knowledge of seafood selection, fabrication, handling, and storage.
- Excellent time management skills
- Sound knowledge of food safety regulations
- The ability to work fast-paced and under pressure
- The ability to stand for long periods of time
- Exceptional customer service skills
- Serv Safe Certified
- Certification from a culinary school is a plus
