Position: Line Cook

Description
Wild Laurel is a privately-owned golf course nestled in the Smoky Mountains providing a full bar and food menu for golfers and guests. Line Cooks will be responsible for providing patrons with a memorable experience at Wild Laurel and will have a passion for hospitality, strong knife skills, ability to work in a fast-paced environment, and a commitment to consistent quality and presentation. They will be expected to uphold our highest standards of hospitality by being attentive, professional, and efficient at all times. They will be expected to have a comprehensive understanding of all menu items.
Responsibilities (shall include but not be limited to)
- Prepare and cook menu items according to standardized recipes, quality standards, and portion control
- Set up and stock station arrays with everything in its place, ensuring freshness and proper rotation
- Monitor and maintain food quality, taste, texture, and presentation throughout service
- Execute proper cooking techniques and ensure consistent plate presentation
- Manage timing to ensure all components of a dish are ready simultaneously
- Maintain cleanliness and organization of all work stations, including the line, prep area, walk-in, and dish area
- Adhere to food safety, sanitation, and allergen protocols; monitor temperature logs and improper handling
- Assist with daily line checks, inventory counts, and rotation; communicate shortages or needs to the supervisor
- Support banquet and event catering with timely, high-quality food production
- Collaborate with all F&B staff to ensure cohesive service
- Maintain proper labeling, dating, and storage of all prepped and leftover foods; participate in waste reduction efforts
- Follow uniform, hygiene, and safety guidelines; wear PPE as required
- Communicate effectively with teammates and management to ensure smooth service
Qualifications
- Minimum 1–3 years of experience as a line cook or in a high-volume restaurant, resort, or club environment
- Knowledge of basic cooking techniques and methods
- Familiarity with standard kitchen equipment (ranges, griddles, fryolater, salamander, mixers, ovens, heat lamps, blast chillers)
- While on-the-job training is provided hands-on experience with pizza-making techniques is a significant plus
- Ability to multitask, prioritize, and stay calm under pressure during peak service
- Strong knife skills and recipe execution; ability to follow standardized recipes and portion control
- Understanding of food safety, sanitation, and HACCP guidelines; certificate in ServSafe or equivalent preferred
- Excellent communication and teamwork skills
- Flexibility to work evenings, weekends, holidays, and events as needed
- A positive attitude, reliable transportation, and a professional appearance
Experience/Education
- High school diploma or equivalent preferred
- 1-3 years of experience as a line cook or in a high-volume restaurant, resort, or club environment
- Experience in the service industry and dealing with the general public
Physical Demands
- Ability to stand for 8+ hours
- Reaching, bending, and twisting; occasional climbing stairs
- Ability to work in a cool storage environment for extended periods
- May require lifting or moving up to 45 pounds
Work Environment
- Fast-paced kitchen, dining room and bar
- Exposure to heat, steam, and noise; handling hot equipment and sharp tools
Work Schedule
- Parttime positions available; typical shifts include lunch, dinner, and occasional banquet/golf related events
- Flexible days and hours including: evenings, weekends and holidays
Compensation
- Starting at $17 per hour
- Signing bonus of $500, spread out $100 at end of each month for 5 months (perfect attendance and performance required to qualify)
