The Kitchen Manager position will encompass all aspects of completing the day-to-day operations of the department at the direction of the Processing Manager.
Duties will include, but not be limited to:
Learning to operate all machines.
Responsible for documentation of ovens and chiller utilization.
Communicating clearly with the Processing Manger to help them develop daily schedules based on production needs, available equipment, cooking space and cooler space.
Communicating clearly with the Processing Manager to understand the tasks that need to be completed on a given day as well as the order of operation for said tasks. Daily schedules will be posted by the Processing Manger and accessible in each department.
Ensuring that all equipment is properly set up and in good working condition prior to use.
Ensuring that all equipment is properly broken down at shift end and all parts are in the proper location.
Ensuring that all daily tasks are completed in an efficient and timely manner.
Communicating clearly with the Processing Manager to determine what materials and supplies will be required to complete daily tasks so the Processing Manager can order.
Maintaining a daily inventory of raw materials and work in progress (WIP) to ensure they are being rotated properly and all items are scheduled for use.
Assisting in areas of greatest need, or at the direction of the Processing Manager, to ensure production remains on schedule.
Assisting the Processing Manager to ensure that all processing areas remain on schedule and are using proper procedures.
Verification Management of procedures. (i.e. pump percentages, proper ingredients used, thaw procedures and monitoring, etc…)
Review all production records for completeness and accuracy before turned in.
Experience Requirements
3-7 years of meat operations experience
Proficiency in link, grind and curing equipment
Ability to handle and communicate with plant floor staff
Freight, shipping, and logistics background
Strong communications skills and positive customer service delivery skills necessary
Willingness to travel as necessary
Environmental Factors and Physical Requirements
May need to move light equipment or supplies from one place to another.
May need to access files, supplies and equipment.
When in a plant environment: Exposure primarily consists of wet and moist floors which include metal and plastic grating surfaces.
May be exposed to temperatures of 28 degrees to 100 degrees Fahrenheit with both ambient and 100% humidity.
May handle product 25 degrees to 50 degrees Fahrenheit. May be exposed to noise ranges of 50 db to 110 db.
May be exposed to all chemicals used in pork, food, processing facility.
Must wear and use protective and safety equipment required for the job as directed by the Company.
