Job Overview
A Japanese restaurant in Williamsburg, Brooklyn focusing on Kaisen-Don (elevated Japanese rice bowls inspired by edomae chirashi sushi) and traditional Japanese cuisine is seeking a full-time Kitchen Manager to join the team.
The team member will be responsible for running the day-to-day operations of the downstairs kitchen. The team member will prepare high-quality dishes that meet the company’s standards and manage a team of two to four team members, ensuring quality and consistency.
Duties
- Maintain daily operations of all stations
- Assist in daily prep or any other assigned work
- Managing team members to complete mise en place and ensure stations are set prior to service
- Use standard recipes and plate presentations in order to maintain standards of quality in production and presentation
- Manage inventory, ordering and communicate with the Head Chef to ensure ingredients are well stocked
- Maintain a good working relationship with all back of house, front of house staff, management and guests
- Store all items properly at the end of shift, labeling and dating all products
- Ensure a clean, neat and organized work area
- Perform other tasks or projects as assigned by management
Requirements
- Practical working experience in a kitchen, preferably in Japanese cuisine
- 1-2 years of cooking experience required
- Flexibility to work shifts, weekends, nights, and holidays
- Strong communication skills and team-first attitude
- Able to stay organized, manage time wisely and work with little to no direct supervision
- Able to handle a multitude of tasks in an intense, fast-paced environment
- Able to maintain a clean and professional appearance as per company policies
- Able to stand for extended periods of time
- Able to carry, push, and pull up to 30 lbs; standing, bending and lifting will be required
- Fluency and/or ability to communicate in other languages (Spanish / Japanese) is a strong plus
