D4 Irish Pub & Café is seeking a professional Kitchen Manager who will employ their culinary and managerial skills to maintain and enhance our kitchen and one who can take our upscale pub & restaurant to the next level.
Job Description:
Manage daily kitchen activities, including overseeing staff, menu preparation, ensuring food quality and freshness and working on the line during peak hours. Other duties include monitoring, ordering and stocking goods and providing meal quality and consistency using existing recipes as well as having the opportunity to create new ones.
Responsibilities:
- Leads kitchen team by providing guidance to kitchen staff members, including, but not limited, to line cooking, food preparation and dish plating
- Oversees and organizes kitchen stock and ingredients
- Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance
- Hires and trains new kitchen employees to restaurant and kitchen standards
- Manages food and product ordering with existing systems to improve waste reduction and manage budgetary concerns
- Supervises all food preparation and presentation to ensure quality and restaurant standards
- Works with staff to maintain kitchen organization, staff ability, and training opportunities
- Verifies that food storage units all meet standards and are consistently managed
- Produces high quality plates in both design and taste
- Coordinates with restaurant management team on supply ordering, budget, and kitchen efficiency and staffing
- Comply with and enforce sanitation regulations and safety standards
- Maintain a positive and professional approach with coworkers and customers
Requirements
- Minimum 2 years of experience in a supervisory role
- Understanding of various cooking methods, ingredients, equipment and procedures
- Excellent record of kitchen and staff management
- Accuracy and speed in handling emergency situations and providing solutions
- General knowledge of expense control as it relates to kitchen payroll and the forecasting/budgeting of expenses
- Familiar with industry’s best practices and must have Chicago Food Handlers Manager Certification
- BS degree in Culinary science or related certificate is a plus
- Bilingual (English - Spanish) communication is a plus
Job Type: Full-time
Hours/week: 45-50 based on the needs of the restaurant
Starting Salary: $55K-$65K based on experience with performance and salary review after 3 months and every 6 months thereafter
