About Us
We're a fast-growing healthy food concept built for delivery, inspired by brands like Pura Vida and Joe & The Juice. Our menu centers on acai bowls, fresh juices, smoothies, grain bowls, wraps, and clean-eating staples — made fast, made fresh, and made to travel well. We operate out of a cloud kitchen, meaning all output goes straight to delivery apps and pickup orders, with no front-of-house or dine-in component. We're looking for a Head Chef who can run a tight, efficient, health-focused kitchen and help us scale across Miami.
Role Summary
We need a chef who treats healthy food as a craft, not a compromise - someone who can build a menu that's nutritious, fast to execute, and consistent order after order. You'll own the kitchen day-to-day: menu execution, food quality, prep systems, inventory, and a small team of cooks. This is a hands-on leadership role in a fast-paced, delivery-only environment where speed and consistency matter as much as flavor.
Responsibilities
- Lead daily kitchen operations for a delivery-only menu of acai/smoothie bowls, cold-pressed juices, smoothies, grain bowls, wraps, and salads, ensuring every order matches recipe specs and plating standards.
- Develop and refine recipes that are nutritionally balanced (calorie-conscious, allergen-aware, macro-friendly) while staying fast to assemble under delivery-time pressure.
- Standardize prep procedures and build prep lists/par levels so the kitchen runs efficiently during peak ordering windows (breakfast, lunch, dinner rushes).
- Manage food cost and portion control across all menu items, tracking waste and adjusting recipes or sourcing to protect margins.
- Source and manage relationships with produce, juice, and specialty ingredient suppliers, prioritizing freshness and quality consistent with a health-forward brand.
- Maintain strict food safety, sanitation, and storage standards in compliance with Miami-Dade County and Florida health codes.
- Hire, train, and supervise line cooks and prep staff; set clear stations, speed targets, and quality checks for a small kitchen team.
- Monitor order accuracy and ticket times across delivery platforms (UberEats, DoorDash, Grubhub) and troubleshoot bottlenecks during high-volume periods.
- Manage inventory counts, ordering schedules, and vendor relationships to avoid stockouts on high-demand items (produce, dairy alternatives, proteins).
- Collaborate with ownership/management on seasonal menu rotations, limited-time offers, and new product testing.
- Ensure packaging integrity for delivery - food holds up, doesn't leak, and arrives looking like the photo.
- Maintain equipment (blenders, juicers, cold press, refrigeration) and flag maintenance needs before they become downtime.
- Keep the kitchen audit-ready at all times for health inspections and internal quality checks.
Qualifications
- 3+ years of professional kitchen experience; prior experience in a juice bar, smoothie/acai concept, fast-casual healthy brand, or cloud/ghost kitchen strongly preferred.
- Working knowledge of nutrition basics (macros, common allergens, dietary trends like vegan, gluten-free, keto) and ability to translate that into menu execution.
- Proven ability to run a kitchen built for speed and consistency rather than à la carte fine dining.
- Experience managing food cost, inventory, and vendor ordering.
- Comfortable working in a no-dine-in, delivery-first environment with tight ticket-time expectations.
- Food safety certification
- Leadership experience supervising a small kitchen team (2–6 people).
- Spanish/English bilingual a plus, given Miami's kitchen workforce.
