Job Summary
We are seeking a dynamic and highly skilled Head Sushi Chef to lead our sushi kitchen with passion, precision, and creativity. Duties
- Lead and supervise the sushi kitchen team, providing clear guidance, training, and mentorship to ensure consistent quality and efficiency.
- Oversee all food preparation activities related to sushi and Japanese cuisine, maintaining strict adherence to recipes, presentation standards, and food safety regulations.
- Develop innovative menu items that reflect current trends while honoring traditional techniques, ensuring variety and customer satisfaction.
- Manage inventory control for raw fish, seafood, rice, condiments, and other ingredients; monitor stock levels and place orders to minimize waste and optimize costs.
- Ensure compliance with health and safety standards across all kitchen operations; implement best practices for food handling, sanitation, and hygiene.
- Coordinate with front-of-house staff to ensure smooth service flow during peak hours and special events such as banquets or catering functions.
- Maintain a clean, organized workspace that promotes efficiency and safety; conduct regular inspections of equipment and facilities.
- Assist in training new team members on sushi techniques, food safety protocols, and restaurant policies to build a cohesive culinary team.
Qualifications
- Extensive experience in sushi preparation with a strong background in Japanese cuisine; fine dining experience preferred.
- Proven supervisory or leadership experience managing culinary teams in high-volume kitchens or banquet settings.
- Knowledge of food production processes, inventory management, and cost control within a restaurant environment.
- Demonstrated expertise in food safety standards, sanitation practices, and dietary department regulations.
- Strong skills in menu planning, food presentation, cooking techniques, and kitchen management.
- Experience with catering services or large banquet operations is a plus.
- Excellent communication skills with the ability to motivate team members and collaborate effectively across departments.
