Purpose:
The dietary aid provides assistance in all dietary functions as directed by the supervisor in accordance with established dietary policies and procedures and state regulations. Maintains high standards of quality food production, portion control, food preparation safety and sanitation, adherence to specifications for special diets, properly sanitized and clean dishes and utensils, proper dishmachine temperatures, and good customer service to residents and staff.

Primary Duties:
1. Assists in serving meals that are palatable and appetizing in appearance on a timely basis and with good customer service.
2. Serves meals in accordance with menus and spreadsheets, established portion control procedures, special diet interactions, spreadsheets, food allergies, and likes/dislikes.
3. Performs daily cleaning duties as instructed. Assures department is maintained in a clean and safe manner. Cleans necessary equipment.
4. Serves on trayline or in the RCC dining room for breakfast, lunch, and dinner meals as instructed.
5. Assists the cook in preparing meals as instructed.
6. Is responsible for ensuring that trays for HCC residents are correct according to their diet prescription before leaving the kitchen.
7. Delivers/serves meals and snacks as instructed.
8. Washes dishes and pots and pans according to state regulations and department policies and procedures. Checks dishmachine to ensure that proper temperatures and parts per million (ppm) of sanitizer in the rinse cycle are maintained for adequacy. Ensures that all utensils and other cooking instruments are properly sanitized and readily available for the next meal.
9. Prepares and delivers snacks as instructed.
10. Follows safety regulations at all times. Follows established Infection Control and universal precaution procedures when performing daily tasks.
11. Prepares food and handles all dietary equipment in accordance with sanitary regulations, as well as established policies and procedures.
12. Disposes of food and waste according to established policies.
13. Assists in maintaining food storage areas in a clean and properly arranged manner at all times. Assists in inventorying and storing incoming food as needed.
14. Maintains confidentiality of all resident information.
15. Performs other duties as assigned.
Educational and Experience Requirements:
1. No prior experience needed. On-the-job training provided.
2. Must have adequate ability to read and understand menus, spreadsheets, traycards, menus, and job outlines and cleaning instructions.
3. Must be able to communicate effectively.
Other Requirements:
1. Must be able to deal tactfully with staff, residents, and visitors.
2. Must be able to follow written instructions.
3. Must maintain a clean appearance and wear the designated uniform.
4. Must maintain a clean and sanitized work area, and must follow all safety policies and procedures.
5. Must maintain confidentiality of resident information.
6. Must attend required training and education sessions offered by the facility.
7. May be required to lift, push, pull, and move equipment, supplies, etc., in excess of fifty (50) pounds throughout the workday.
Equipment Used:
Dishmachine, heated pellet system, juice machine, coffee machine, mixers, blenders, food processors, can openers, garbage disposal, cutting boards, and knives.
Working Conditions:
1. May be exposed to infectious waste and disease (including HBV and HIV).
2. Will be exposed to heat in kitchen work areas and cold temperatures in food storage/freezer areas.
3. Stands, bends, lifts and moves throughout workday.
4. May be required to work after regular work hours, on holidays, and weekends.
5. May be required to work on shifts other than the shift initially hired for.
