What You’ll Do
Prepare sushi, sashimi, nigiri, maki, and specialty rolls to precise Kumori standards
Ensure every plate is fresh, beautiful, and consistent
Maintain expert knife skills and proper rice handling
Follow portion guidelines to support cost control
Set up and maintain a clean, stocked, organized sushi station
Ensure accuracy, timeliness, and smooth coordination with BOH & FOH teams
Follow all food safety, sanitation, labeling, and storage procedures
Assist with inventory and report ingredient shortages or quality concerns
Minimize waste through proper rotation and handling
Maintain professionalism, punctuality, and grooming standards
Perform other duties as assigned by management
What We’re Looking For
Strong sushi and knife skills; knowledge of Japanese culinary principles
Detail-oriented with high standards for presentation and quality
Calm under pressure in a fast-paced environment
Reliable and strong team communication skills
Prior sushi experience preferred
Bilingual candidates strongly encouraged
Physical Requirements
Stand for extended periods and work efficiently during rushes
Lift up to 25 lbs and perform repetitive hand and arm motions
Able to bend, reach, and handle delicate ingredients precisely
Work comfortably in both hot and cold environments
Maintain full sensory awareness and safe operation of sharp tools
Work Environment
Fast-paced sushi bar and kitchen environment
Close coordination with chefs, cooks, and service staff
Requires availability on nights, weekends, and holidays
