Duties
- Prepare a variety of sushi, sashimi, and other Japanese dishes with precision and artistry, ensuring consistency and presentation excellence
- Develop and refine sushi menus that align with restaurant standards and customer preferences
- Maintain strict adherence to food safety protocols, including proper handling, storage, and sanitation practices
- Source fresh ingredients and manage inventory to ensure the availability of high-quality seafood and accompaniments
- Collaborate with kitchen staff to coordinate meal preparation and ensure timely service during busy hours
- Demonstrate exceptional knife skills for slicing fish, vegetables, and other ingredients efficiently and safely
- Assist in training junior team members on sushi preparation techniques, food handling, and safety procedures
Requirements
- Proven experience in sushi preparation or Japanese cuisine within a restaurant or fine dining setting
- Strong knowledge of food safety standards and proper food handling procedures
- Demonstrated culinary experience with an emphasis on knife skills, food presentation, and ingredient sourcing
- Background in dietary department or dietary aide experience is a plus, emphasizing attention to dietary restrictions and menu planning
- Experience in food industry roles such as catering or food service enhances your ability to thrive in this position
- Excellent skills in meal preparation, cooking techniques, and food industry best practices
- Ability to work efficiently under pressure while maintaining high standards of cleanliness and safety
