Experienced BBQ Cook / Meat Cutter
Old Hickory Inn BBQ is hiring dependable, experienced cooks and meat cutters for our newest location, which opened approximately three months ago. Full-time and part-time positions are available, with room to grow as the location continues to develop.
This is not an entry-level position. Applicants should have previous restaurant cooking, BBQ, meat-cutting, or high-volume kitchen experience.
Responsibilities
- Cook and prepare BBQ meats and other menu items according to company procedures
- Slice brisket properly and cut ribs, chicken, sausage, turkey, pork, and other meats
- Weigh and portion meats accurately
- Prepare clean, attractive, and consistent dine-in and to-go plates
- Complete daily food preparation, stocking, and product rotation
- Monitor food quality, temperatures, freshness, and holding times
- Keep knives, cutting boards, counters, equipment, coolers, floors, and storage areas clean and organized
- Label, date, cover, and store food properly
- Work quickly and accurately during busy periods
- Minimize waste and maintain portion control
- Complete opening and closing duties, including cleaning equipment, sweeping, mopping, removing trash, and preparing the kitchen for the next shift
- Follow all food-safety and sanitation procedures
Qualifications
- Previous professional cooking or meat-cutting experience required
- BBQ restaurant experience strongly preferred
- Ability to safely use knives and properly slice and portion meats
- Strong attention to cleanliness, food quality, and plate presentation
- Dependable attendance and reliable transportation
- Ability to work independently after training
- Availability for evenings, weekends, and some holidays
- Ability to stand for extended periods, work around heat, and lift up to 50 pounds
- Texas Food Handler Certificate required or must be obtained promptly
- Bilingual English and Spanish is helpful but not required
Pay and Benefits
- Starting training rate of $12 per hour
- Training generally lasts approximately two weeks
- Base pay may increase to $15–$16 per hour after successfully demonstrating the ability to cook, cut, portion, clean, close, and work independently
- Eligible employees receive a share of tips in addition to hourly pay
- Approximately 30–45 hours per week
- Occasional overtime may be available
