QUALIFICATIONS:
- Minimum of five years of leadership experience managing multi unit food and beverage retail outlets.
- Demonstrated experience in maintaining consistent, high quality guest service levels and a proven track record of maximizing food and beverage revenues while controlling cost of goods sold, labor expenses and other operating costs.
- Experience with and knowledge of applicable food service and beverage operations regulatory compliance requirements.
- Comprehensive knowledge of product marketing business planning, operational and capital budgeting functions.
- Strong leadership skills and customer service orientation required.
- Must be able to work effectively with peers, staff members, and regulatory agency personnel.
- Strong computer skills to include effective working knowledge of Microsoft Office Products. Knowledge of various purchasing, pricing, point of sale and food and beverage cost control management support systems preferred.
- Strong written and oral communication skills required.
- Ability to solve problems and deal with a variety of situations where only limited standardization exists.
- Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
ESSENTIAL JOB FUNCTIONS:
- Responsible for providing overall tactical and strategic direction for the company’s food and beverage profit centers including all restaurants, banquet services, beverage operations, and production support facilities.
- Responsible for the selection, training, evaluation and supervision of all food and beverage operations staff in accordance with the organizational structure.
- Ensures the effective marketing of food and beverage retail outlets to ensure maximum departmental profitability and support to the casino operations.
- Responsible for on-going daily operations, guest services, cash control and interface with other departmental operations personnel.
- Ensures that all employees understand and are accountable for their area(s) of responsibility. Acts as a role model for employees and fosters teamwork, employee morale, motivation and open communication.
- Promotes outstanding guest relations.
- Ensures that all department employees are adhering to the attendance policy.
- Ensures that all department employees are in compliance with appearance standards.
- Ensures that all department employees understand the Eye-Hi-Goodbye Program and are complying with the program.
- Must be knowledgeable of and ensures staff are in compliance with all applicable regulations, laws, internal policies/procedures, and internal control protocols.
- Monitors departmental, retail unit and individual performance standards on a regularly basis. Implements corrective action as may be necessary.
- Determines work procedures, prepares work schedules, and expedites workflow.
- Issues written and oral instructions.
- Assigns duties and examines work for exactness, neatness, and conformance to policies and procedures.
- Study and standardize procedures to improve efficiency of subordinates.
- Maintains harmony among workers and resolves grievances.
