About Hell or High Water
Hell or High Water is a chef-driven restaurant located in Black Mountain’s historic Ice House and part of the Foothills Local Meats family. For more than 24 years, Foothills has built its reputation on quality, integrity, and a stubborn commitment to doing things the right way.
Our kitchen focuses on thoughtfully sourced ingredients, refined technique, and seasonal creativity. Much of our meat comes directly from our own butcher shop, processed from whole animals raised on farms across Western North Carolina.
We are building a disciplined, collaborative kitchen team that values craftsmanship, consistency, and professionalism. Every role in the kitchen directly impacts the guest experience.
About You
You take pride in your work and understand that consistency matters as much as creativity. You stay focused under pressure, maintain a clean and organized station, and communicate clearly with your team.
You do not wait to be told what to do. During slower moments, you prep, clean, and set the team up for success. You respect the ingredients, the process, and the people around you.
Previous kitchen experience is preferred, but reliability, attitude, and willingness to learn are essential.
Available PositionsLine Cooks
Line Cooks execute dishes during service with speed, accuracy, and consistency.
Responsibilities
- Prepare and plate menu items according to chef standards
- Maintain consistency in portioning, temperature, and presentation
- Manage station setup, execution, and breakdown
- Communicate clearly with chefs and teammates during service
- Maintain a clean, organized, and stocked station
- Follow all food safety and sanitation standards
Prep Cooks
Prep Cooks ensure the kitchen is ready for service through preparation and organization.
Responsibilities
- Prepare ingredients according to recipes and production needs
- Assist with butchery, portioning, and mise en place
- Maintain proper storage, labeling, and rotation of products
- Keep prep areas clean and organized
- Support line cooks and chefs as needed
Dishwashers
Dishwashers are essential to kitchen efficiency and cleanliness.
Responsibilities
- Wash, sanitize, and store dishes, utensils, and equipment
- Maintain cleanliness of dish area and kitchen spaces
- Assist with trash removal and general cleaning
- Support the kitchen team during high-volume periods
- Follow all sanitation and safety standards

- Handle fast-paced service while maintaining professionalism
- Assist with opening, closing, and side work duties
- Follow proper storage, labeling, and rotation procedures
- Operate kitchen equipment safely and efficiently
- Support the team wherever needed during service
Requirements
- Previous kitchen experience preferred
- Food safety knowledge required (ServSafe a plus)
- Ability to work in a fast-paced, high-pressure environment
- Strong teamwork and communication skills
- Willingness to learn and take direction
- Ability to stand for extended periods and lift up to 50 pounds
- Ability to work in a hot kitchen environment
- Flexible availability including days, nights, weekends, and holidays
- Availability for lunch, dinner, or both preferred
Pay
Line Cooks: $20–$24 per hour, depending on experience
(Prep and Dishwasher pay based on experience and role)
Hours: 16–40 hours per week based on availability and business needs
