Responsibilities
- Lead the sushi kitchen operations, ensuring top-tier food quality, presentation, and consistency across all dishes
- Supervise and mentor sushi chefs and kitchen staff, promoting skill development and teamwork
- Develop innovative sushi menus that align with current trends while maintaining authenticity and customer preferences
- Oversee food preparation processes, ensuring adherence to food safety standards and proper handling procedures
- Manage inventory control for raw fish, seafood, rice, seaweed, and other ingredients to minimize waste and optimize costs
- Coordinate with the restaurant management team to plan catering events, banquets, and special dining occasions involving sushi offerings
- Ensure compliance with health regulations and maintain a clean, organized kitchen environment at all times
- Oversee shift management, scheduling staff efficiently to meet service demands without compromising quality
- Implement training programs on food safety practices, culinary techniques, and customer service standards
Experience
- Extensive culinary experience in the food industry with a focus on sushi or Japanese cuisine
- Proven supervising experience leading culinary teams in a high-volume restaurant or fine dining environment
- Strong background in food production, food service management, and kitchen operations
- Experience managing inventory control systems within a restaurant or catering setting
- Demonstrated leadership skills with the ability to motivate staff and foster a positive team environment
- Knowledge of banquet and catering operations involving sushi or similar cuisine is preferred
- Familiarity with dietary requirements and food handling regulations to ensure safe service standards
