Duties
- Prepare and assemble cold menu items such as salads, appetizers, charcuterie boards, and other chilled dishes with attention to detail and presentation.
- Follow established recipes, portion controls, and plating techniques to ensure consistency across all dishes.
- Maintain cleanliness and organization of the cold prep station, adhering strictly to food safety sanitizing procedures.
- Assist in menu planning by suggesting innovative cold dish ideas that align with current culinary trends.
- Support food production during peak hours by efficiently managing multiple cold line stations while maintaining quality standards.
- Ensure proper food handling practices are followed at all times, including safe storage, temperature control, and sanitation protocols.
- Collaborate with kitchen staff to coordinate meal preparation and ensure timely service delivery.
Requirements
- Proven experience in dietary departments or as a dietary aide is highly desirable.
- Prior experience working in fine dining or high-volume restaurant environments demonstrating excellent food preparation skills.
- Strong knowledge of food safety management, sanitizing procedures, and proper food handling techniques.
- Skilled in various cooking methods including poaching, braising, grilling, and general food production.
- Exceptional knife skills and familiarity with culinary techniques such as food plating and meal assembly.
- Ability to thrive in a fast-paced setting while maintaining attention to detail and quality standards.
- Experience with menu planning, catering, or serving in the food industry is a plus.
