Position Summary
The Kitchen Lead is responsible for independently managing all back-of-house food preparation and production. This position oversees the complete cooking process—from food preparation and cooking to plating, quality control, sanitation, inventory organization, and maintaining an efficient kitchen. The ideal candidate is organized, dependable, and capable of working independently while consistently producing high-quality meals in a fast-paced café environment.
Key Responsibilities
- Prepare all menu items according to Rustika Cafe & Bakery recipes and presentation standards.
- Complete daily food preparation before service begins.
- Cook breakfast, brunch, lunch, soups, sandwiches, and other menu items during service.
- Plate all meals with consistency, accuracy, and attention to presentation.
- Ensure food quality, freshness, taste, and portion consistency at all times.
- Monitor cooking times and coordinate multiple orders efficiently.
- Maintain a clean, organized, and sanitary kitchen throughout each shift.
- Wash, sanitize, and properly store kitchen equipment and utensils.
- Properly label, date, rotate, and store all food using FIFO (First In, First Out) procedures.
- Monitor inventory levels and notify management of items that need replenishment.
- Minimize food waste and control portion sizes.
- Receive and properly store deliveries.
- Ensure all refrigerators, freezers, pantry shelves, and storage areas remain organized.
- Follow all food safety, sanitation, and health department regulations.
- Assist in developing daily specials and seasonal menu items when requested.
- Report equipment maintenance needs immediately.
- Support bakery operations when needed.
- Maintain a positive attitude and communicate effectively with front-of-house staff and management.
Qualifications
- Minimum 2 years of cooking experience in a café, restaurant, or similar food service environment preferred.
- Ability to independently manage a kitchen during service.
- Strong knowledge of breakfast, brunch, lunch, soups, sandwiches, and short-order cooking.
- Understanding of food safety and sanitation standards.
- Excellent organization and time-management skills.
- Ability to multitask under pressure while maintaining quality.
- Dependable, punctual, and self-motivated.
- Ability to stand for extended periods and lift up to 50 pounds.
Preferred Skills
- Experience working in a café or bakery.
- Knowledge of inventory management and food cost control.
- Experience preparing a variety of breakfast and lunch dishes.

Pay: $13.00 - $16.00 per hour
