We are looking for a Commissary Chef for our new Commissary Kitchen opening next month. The Commissary Chef is responsible for overseeing the daily production, quality, and distribution of food prepared in the commissary kitchen. This role ensures consistent execution of recipes, adherence to food safety standards, efficient production scheduling, inventory management, and timely delivery of products to retail, catering, and hospitality operations. The Commissary Chef leads kitchen staff, maintains operational excellence, and supports menu development while ensuring profitability and exceptional product quality.
- Oversee all commissary food production activities and daily kitchen operations.
- Execute production schedules to meet operational, catering, and retail demands.
- Ensure recipes, portioning, and presentation standards are consistently followed.
- Monitor food quality, freshness, and product consistency.
- Maintain a clean, organized, and efficient production environment.
- Hire, train, supervise, and develop commissary kitchen staff.
- Create and manage staff schedules to support production needs.
- Foster a positive, collaborative, and accountable team culture.
- Conduct performance evaluations and provide ongoing coaching.
- Ensure compliance with all local, state, and federal health regulations.
- Conduct regular inspections and corrective actions when necessary.
- Ensure proper storage, labeling, and handling of all food products.
- Manage inventory levels, purchasing, and receiving procedures.
- Monitor food and labor costs to achieve budgeted targets.
- Collaborate with culinary leadership on menu planning and seasonal offerings.
- Support special events, catering programs, and new product launches.
- Coordinate packaging, labeling, and delivery schedules.
- Ensure products are prepared and distributed accurately and on time.
Pay: $20.00 - $30.00 per hour
