About the Role
The Director of Nutrition Services leads nutrition strategy, menu development, and regulatory compliance across Riviera Hospitality Group and Brooklyn Kitchen's meal programs.
This is a highly collaborative leadership role with the opportunity to influence company strategy, drive innovation, and shape the future of our expanding Food is Medicine and healthcare nutrition programs.
This role partners with Culinary, Operations, Procurement, and Business Development to keep menus, labeling, and nutrition standards compliant while supporting company growth.
Responsibilities
- Serve as the company's lead nutrition expert and primary clinical nutrition resource
- Write monthly menus for varied clients in the senior, homeless, and K-12 divisions that are compliant with all state and federal nutritional standards
- Lead the development of innovative, medically tailored menus that balance clinical nutrition, culinary quality, participant satisfaction, and cost
- Oversee nutritional compliance across all meal programs
- Develop and maintain medically tailored menus with Culinary and Operations, including cost analysis
- Conduct and validate nutritional analysis for all active and new menus
- Maintain FDA-compliant nutrition facts panels, ingredient labels, and allergen labeling across all SKUs
- Manage the GAIA menu and nutritional labeling platform (recipe inputs, menu creation, production workflows)
- Identify margin-improvement opportunities through menu cost analysis while maintaining nutritional integrity
- Maintain and distribute client-specific monthly menus
- Support RFPs, bids, and new business development with nutrition expertise
- Establish nutrition-related SOPs and train internal teams
- Prepare and deliver monthly nutrition counseling and nutrition education, when needed
- Represent the organization as the nutrition subject matter expert with clients, regulatory agencies, and healthcare partners
- Collaborate with executive leadership on new program development, healthcare initiatives, and strategic growth opportunities
Requirements
- Registered Dietitian (RD/RDN) required
- Master’s degree in Nutrition, Public Health, or related discipline preferred
- Experience with medically tailored meals, healthcare nutrition, and large-scale food production
- Knowledge of Food is Medicine, Medicaid, and Social Care Network (SCN) programs preferred
- Familiarity with Computrition, Simple Servings, ESHA, CBORD, GAIA, Odoo, or similar nutrition software
- ServSafe Certification (may be obtained during employment)
- Strong data analysis, communication, and cross-functional leadership skills
- Comfortable in a fast-paced, collaborative, high-growth environment with evolving structure
- Passion for improving health outcomes through food, public health, and innovative nutrition programs
Pay: $110,000.00 - $125,000.00 per year
