Tamashii Ramen is growing, and we are excited to add a Commissary Kitchen Manager to lead our central kitchen operations in Memorial, OKC, supporting our current locations in Midtown, Edmond, and Norman — with our 4th location opening this Spring.

While this role offers a consistent weekday schedule, it is a leadership position. Occasional weekend availability is expected when business needs arise (high-volume weeks, new store openings, or production recovery). This role is best suited for someone who takes ownership and steps in when the team needs support.

Position Summary
The Commissary Kitchen Manager oversees all daily operations of Tamashii’s central kitchen, ensuring production runs efficiently, accurately, safely, and consistently. This role requires hands-on leadership, strong organization, attention to detail, and pride in producing high-quality food at scale.
You will work closely with the Operations Manager and restaurant leadership teams to forecast needs, manage inventory, and ensure each location receives the right product at the right time — every time.
Core Responsibilities
- Oversee daily production, prep, packaging, and distribution of all commissary items
- Ensure production schedules are efficient, timely, and aligned with each location’s demand
- Maintain accurate inventory of ingredients, finished goods, and dry storage
- Oversee purchasing, product control, and vendor communications
- Monitor food quality, taste, temperature, and consistency before distribution
- Implement and enforce food safety, sanitation, and health department compliance
- Maintain organized production records, transfer logs, and waste reports
- Conduct daily checks and end-of-day audits for prep completion and labeling accuracy
- Coordinate closely with satellite kitchen managers and operations leadership
- Lead, train, coach, and motivate commissary staff to uphold Tamashii standards
- Foster accountability, teamwork, cleanliness, and pride within the kitchen

Skills & Qualifications
- Strong analytical and problem-solving skills; able to forecast needs and improve systems
- Exceptional organizational and planning ability; manages multiple prep lines and priorities
- Refined attention to detail in flavor, texture, and food quality
- Strong leadership and coaching skills that promote accountability and growth
- Excellent communication skills; able to work with English- and non-English-speaking employees
- Proficiency with Excel or Google Sheets for inventory tracking and production planning
- Strong time management and ability to perform under pressure in a fast-paced environment
Certifications & Experience
- Current Food Safety Manager Certification (ServSafe)
- Minimum 3 years of restaurant management or large-scale food production experience
- Knowledge of HACCP principles and food-safe handling procedures
Preferred (Nice to Have)
- Experience with commissary or central kitchen operations for a restaurant group
- Bilingual (English/Spanish)
Schedule & Leadership Expectations
- Primary schedule is Monday through Friday
- Occasional weekend work may be required based on business needs
- This role requires a hands-on leader who supports the team during critical moments — not just assigned shifts

Base Pay: $60,000.00 - $80,000.00 per year
