Title: LINE COOK
Reports to: Kitchen Manager
Summary of Position:
The Pantry Cook is responsible for preparing and plating a variety of menu items, including cold dishes as well as hot items such as sandwiches and melts. This position plays a key role in maintaining food quality, presentation, and timing during service. The Pantry Cook keeps their station clean, organized, and fully stocked while working efficiently to ensure all food is prepared to recipe and spec. Success in this role requires strong multitasking skills, attention to detail, and the ability to stay calm and focused during busy periods.
Duties & Responsibilities:
- Prepare and plate both hot and cold menu items such as sandwiches, melts and salads according to recipe and presentation standards.
- Ensure all food is made fresh, portioned correctly, and served hot or cold as intended.
- Maintain a clean, organized, and fully stocked pantry station throughout the shift.
- Prep ingredients for service, including slicing produce, portioning proteins, preparing dressings, sauces, and condiments to par levels.
- Follow proper food storage, labeling, and rotation (FIFO) to maintain freshness and minimize waste.
- Coordinate with other line cooks to ensure food is timed and plated correctly for each order.
- Monitor station stock levels during service and restock as needed.
- Communicate any shortages, quality concerns, or equipment issues to the supervisor immediately.
- Adhere to all food safety and sanitation procedures, including cleaning, sanitizing, and temperature control.
- Assist with daily prep work as needed.
- Complete end-of-shift cleaning, restocking, and closing duties.
- Support teamwork and maintain a positive, professional attitude under pressure.
Qualifications:
- Minimum of 6 months of experience as a pantry, sandwich, or line cook in a high-volume kitchen.
- Proficient at preparing both hot and cold menu items to order.
- Strong attention to detail and commitment to consistency and presentation.
- Ability to multitask and stay organized during busy service periods.
- Basic knife skills and familiarity with kitchen equipment such as grills, toasters, and slicers.
- Knowledge of food safety and proper handling procedures.
- Able to lift up to 40 pounds and stand for long periods (up to 9 hours).
- Good communication and teamwork skills.
- Flexible availability, including weekends and holidays.
- Dependable, efficient, and motivated to maintain high standards of quality.
Title: DISHWASHER
Reports to: Kitchen Manager
Summary of Position:
Work as part of a team in a fast-paced culinary environment. The dishwasher’s duties include removing soiled plates and flatware from tables, washing them thoroughly, and resetting tables in preparation for the next party. They may also restock items, unload delivery trucks, help prepare cook stations, clean appliances and machines, empty and clean trash receptacles, and other duties, as needed.
Duties & Responsibilities:
■ Ensuring the availability of clean dishes by bussing tables, washing dishes, pots, pans, and flatware, and resetting dining areas.
■ Preparing dining areas and kitchen for next shift by cleaning and restocking dining areas and cook stations.
■ Cleaning machines and appliances used in the kitchen, such as coffee makers, pots, and pans, mixers, etc.
■ Unloading and storing deliveries.
■ Sweeping and mopping floors, especially in the event that items are broken or spilled.
■ Taking out the trash and rinsing garbage cans or trash area.
■ Supporting other restaurant staff members by assisting with other tasks, as needed.
■ Reporting kitchen accidents or violations of food safety codes and procedures.
Qualifications:
■ No previous restaurant experience required.
■ Be able to working in a standing position for long periods of time (up to 5 hours).
■ Be able to communicate clearly and effectively in the predominant language(s) of our guests.
■ Must have exceptional grooming habits.
