Dale’s Revision
At Dale’s we are a wood fire dining destination in the heart of Winston-Salem, dedicated to celebrating the bounty of North Carolina’s Piedmont. Our mission is to create a gathering place for neighbors and traveling food enthusiasts by providing hand made pastas, woodfired share plates and a curated, world-class organic and biodynamic wine program. Dale’s will be utilizing our in house butcher program, sourdough bread program, pasty program, and pasta program to create a simple and skillfully executed menu. Our bar program will be focused on the classics.
At Dale’s we are looking for chefs who are not afraid to get a little singed and soot on their apron. At Dale’s the hearth is the heart of our kitchen. We don’t just cook with fire; we manage live heat, smoke, and embers to create food that tastes like where it came from.

Key Responsibilities
- Job Role Execution: Take full ownership of your position.
- Innovate with Fire: Execute seasonal menus that highlight the unique profiles of smoke and flame-searing of local meats and produce.
- Lead the Team: Train or and inspire a small, tight-knit team on the nuances of live-fire cooking and high-volume service.
- Source Locally: Work directly with local farmers and purveyors to bring the best of the season to the coals.
- Maintain the Standard: Ensure top-tier food safety, inventory management, and kitchen organization.
Requirements and Qualifications
- Experience: At least 1-5 years in a high-volume professional kitchen, with a proven track record in your kitchen role.
- Food Knowledge: Understanding terms and definitions of global and local products also classic and modern techniques.
- Creativity: Have a passion for rustic, bold flavors and a "back-to-basics" approach to elevated dining. Have a love for experimentation and the process.
- Grit: The ability to stay cool while working in a high-heat environment. Ability to learn from and own mistakes.
